4 sprigs fresh oregano
2 sprigs fresh thyme
1 clove garlic, smashed
1/2 teaspoon kosher salt, plus as needed
Freshly ground black pepper
1 pound baby mozzarella (boconccini), drained
2 tablespoons fruity extra-virgin olive oil, plus for drizzling
3 large ripe tomatoes (about 1 1/2 pounds)
1/2 cup flat-leaf parsley leaves, roughly chopped
1/2 cup pitted kalamata olives

12 baby artichokes

  • Fill a large bowl halfway with water. Squeeze the lemon halves into the water and add the lemons. Trim the stem of 1 artichoke. 1 can artichoke heart, drained and sliced
4 tablespoons butter
1/2 cup onion, finely chopped
4 ounces pancetta, cut into thin strips

1/3 cup freshly grated parmigiano-reggiano cheese
