PENNE RIGATTI ALA VODKA
A very easy recipe to make and is very tasty. Found a recipe similar to this one several years ago and made my own modifications to achieve a nice flavor. This recipe doubles very well, but be careful when igniting the Vodka. I suggest that the Vodka and cayenne pepper be burned in separte batches, then combine together before continuing with the recipe.

Steps:
- 1. Cook the pasta according to package directions,el dente. Strain and reserve. Using the same pot as the pasta, turn the heat to high and add the vodka. Bring to a light boil and add the sauce stirring frequently, lower the heat to a simmer.
- 2. whisk in the heavy cream,3/4 of the grated cheese and stir frequently until the sauce come to a light boil. Chop the basil coarsely and add about half of it for the sauce and the other is for garnish along with the remainder of the cheese.
- 3. The sauce should be pinkish in color and the alcohol in the vodka will evaporate leaving the flavor of the spirit. Serve in pasta bowls with a fork and a spoon so you can get all the goodness! I also like to have this with a good loaf of bread and a nice tossed salad, delicious!! A little red crushed pepper on it isn't to shabby either!! Enjoy!:)
Tips:
- Use high-quality vodka for the best flavor. Look for a vodka that is distilled at least three times and has a smooth, clean taste.
- Don't be afraid to experiment with different types of pasta. Penne is a classic choice, but you can also use spaghetti, rigatoni, or any other type of pasta that you like.
- If you don't have heavy cream, you can use milk or half-and-half instead. However, the sauce will be thinner and less creamy.
- Add a pinch of red pepper flakes to the sauce for a little bit of heat. You can also add other spices, such as garlic powder, onion powder, or Italian seasoning, to taste.
- Serve the pasta immediately, topped with grated Parmesan cheese. You can also garnish the pasta with fresh basil or parsley.
Conclusion:
This penne alla vodka recipe is a quick and easy weeknight meal that is sure to please the whole family. The creamy, flavorful sauce is made with just a few simple ingredients, and the pasta can be cooked in under 15 minutes. So next time you're looking for a delicious and easy pasta dish, give this penne alla vodka recipe a try.
