PIERCE BROSNAN'S PENNE PASTA

Pierce Brosnan's Penne Pasta image

Rumor has it, this is Pierce Brosnan's favorite penne. It comes from one of Pierce's favorite restaurants, II Ristorante di Giorgio Baldi in California. It has become a Watson favorite with a few of our personal changes. The recipe calls for porcini mushrooms, since I can't find them here, I use fresh portobello mushrooms. This is so simple, but so.... good.

Time 25m

Yield 3 to 4 servings.

Number Of Ingredients 11

1 ounce dried mushrooms (like cremini, porcini; whatever you like)
Salt
1 tablespoon olive oil
3 tablespoons butter
2 teaspoons minced garlic
1 medium yellow onion, chopped
1 pound fresh mushrooms like shiitake or button, sliced (a variety is nice)
1/2 cup dry white wine or mushroom-soaking liquid
1/2 pound cut pasta, like ziti or penne
1/2 cup fresh chopped parsley, plus more for garnish
Fresh-shaved Parmesan (optional)

Steps:

  • Soak the dried mushrooms in very hot water until soft, anywhere from 5 to 15 minutes. When they are tender, remove the dried mushrooms from the soaking liquid with a slotted spoon, reserving the liquid; slice or chop if the pieces are large.
  • Set a large pot of water to boil for the pasta and salt it. Put a large skillet over medium-high heat, and add the olive oil and 2 tablespoons butter. When it is hot, add the garlic and onions; cook, stirring occasionally, until the onions begin to soften, 3 to 5 minutes. Add the fresh mushrooms and dried mushrooms when they're ready, and cook until they give up their liquid and start to brown, at least 15 minutes. Add the white wine or mushroom-soaking liquid to the pot and cook, scraping up any browned bits from the bottom as the liquid starts to bubble.
  • Meanwhile, cook the pasta until tender.
  • Reduce skillet heat to low. Add remaining butter and the parsley, and stir to combine; sprinkle with salt and pepper. When the pasta is done, drain it. Add the pasta to the mushroom mixture, and toss until well combined. If the mixture is dry, add a little pasta water or mushroom-soaking liquid. If you like, garnish with Parmesan and more parsley.

Tips:

  • Use high-quality dried porcini mushrooms. This will give your dish the best flavor. If you can't find dried porcini mushrooms, you can use fresh ones, but they will need to be cooked for a longer period of time.
  • Soak the porcini mushrooms in hot water for at least 30 minutes before using. This will help to rehydrate them and make them more flavorful.
  • Use a good quality olive oil. This will also help to enhance the flavor of your dish.
  • Don't overcrowd the pan when cooking the mushrooms. This will prevent them from cooking evenly.
  • Season the mushrooms with salt and pepper to taste. You can also add other herbs and spices, such as garlic, thyme, or rosemary.
  • Serve the pasta immediately after it is cooked. This will prevent it from becoming gummy.

Conclusion:

Penne al Funghi Porcini is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight dinner. The combination of the earthy mushrooms, the rich sauce, and the al dente pasta is sure to please everyone at the table.
