AVOCADO TOAST

Avocado Toast image

Avocado toast is creamy, crisp and so satisfying. It's a delicious and simple breakfast, snack or light meal! It's best consumed immediately, since the avocado browns over time. Recipe as written yields 1 slice of basic avocado toast; multiply as necessary.

Categories     Breakfast

Time 5m

Number Of Ingredients 4

1 slice of bread (I like thick-sliced whole-grain bread best)
1/2 ripe avocado
Pinch of salt
Optional: Any of the extra toppings suggested in this post

Steps:

  • Toast your slice of bread until golden and firm.
  • Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it's as smooth as you like it. Mix in a pinch of salt (about 1/8 teaspoon) and add more to taste, if desired.
  • Spread avocado on top of your toast. Enjoy as-is or top with any extras offered in this post (I highly recommend a light sprinkle of flaky sea salt, if you have it).

AVOCADO TOAST

Avocado Toast image

It may seem silly to give a recipe for avocado toast, but there is an art to it, as with most things that are both simple and perfect. Here, you want to make sure of a few things: that the bread you use is sturdy and has some taste; that there's enough salt and citrus to bring out the avocado's flavor; and that you use a good olive oil to bring it all together. These garnishes, from the Australian café Two Hands in Manhattan, are tasty but unnecessary.

Time 5m

Yield 2 servings

Number Of Ingredients 10

2 large slices crusty, chewy sourdough bread, preferably whole wheat
1 ripe avocado, halved, pit removed
Extra-virgin olive oil
Flaky salt and coarsely ground black pepper
Half a lemon or lime
Poached or fried eggs
Thinly sliced pickled or fresh red chiles, such as Fresno or cherry
Thinly sliced pickled red onions
Pepitas (pumpkin seeds) or sesame seeds, or both
Herbs, such as basil, cilantro, mint or baby arugula

Steps:

  • Toast the bread to your liking. Meanwhile, use a wide spoon to remove the avocado halves from the peel, keeping them in large pieces.
  • Drizzle the hot toast lightly with olive oil and sprinkle with salt. Let cool slightly, then place one avocado half on each slice of toast. Use the back of a fork to roughly mash the avocado into the bread, keeping it as chunky as possible.
  • Sprinkle with a little more salt, and pepper if desired. Squeeze the citrus over the top and add any garnishes. Cut each piece of toast in half if they're large and serve immediately.

Tips:

  • Select ripe avocados: Choose avocados that are slightly soft when gently pressed. Avoid avocados that are too hard or have brown spots.
  • Use quality bread: Opt for a thick, sturdy bread that can hold up to the weight of the toppings. Sourdough, whole-wheat, or multigrain bread are great choices.
  • Mash avocados properly: For a smooth and creamy spread, mash the avocados thoroughly with a fork or potato masher. You can also use a food processor for a finer texture.
  • Season the avocado spread: Enhance the flavor of the avocado spread by adding a pinch of salt, pepper, and a squeeze of lemon or lime juice. You can also add other seasonings like garlic powder, onion powder, or chili flakes.
  • Layer the toppings: Start with a layer of avocado spread on the toasted bread. Then, add the sliced tomatoes, hard-boiled eggs, and crumbled feta cheese. You can also add other toppings of your choice, such as smoked salmon, bacon, or sprouts.
  • Season the eggs and tomatoes: Sprinkle a little salt and pepper on the sliced tomatoes and hard-boiled eggs to enhance their flavors.
  • Add some greens: For a pop of freshness and extra nutrients, add a handful of microgreens or chopped herbs like cilantro, parsley, or basil to the toast.

Conclusion:

Peekaboo avocado toast is a delicious and versatile breakfast or brunch option that is easy to make and customizable to your liking. With its creamy avocado spread, colorful toppings, and hearty bread, it offers a satisfying and nutritious start to your day. Experiment with different toppings and seasonings to create your own unique version of this popular dish.
