PECAN TURTLES
I made these "turtle-like" concoctions one Christmas for a sweets exchange. My dad saw them on the counter waiting to be boxed up and couldn't believe I made them. He said they looked like they came from a candy shop. That's the best compliment I've ever received. -Carrie Burke Conway, Massachusetts

- 2. Arrange the pretzels in a single layer on a parchment lined cookie sheet. Place one chocolate covered caramel candy on each pretzel.
- 3. Bake on 300 degrees for 5 minutes. Place in oven to soften rolos, approximately 5 minutes. Check occassionally, don't let them melt.
- 4. Take out of oven.
- 5. Push a pecan half on top of each rolo
- 6. Set in a cool area or fridge to harden.
- 7. Remove from fridge and store in bag or container.

Tips:
- To easily remove the caramel from the saucepan, add a little bit of water to the saucepan and bring it to a simmer. The caramel will loosen and be easy to pour.
- If you don't have a candy thermometer, you can test the caramel by dropping a small amount into a glass of cold water. If the caramel forms a hard ball, it is ready.
- Be careful not to overcook the caramel, or it will become too hard and brittle.
- If you want to make the turtles ahead of time, you can store them in an airtight container in the refrigerator for up to 2 weeks.

Pecan turtles are a delicious and easy-to-make candy that is perfect for any occasion. With just a few simple ingredients, you can create a sweet and salty treat that everyone will love. So next time you're looking for a quick and easy dessert, give pecan turtles a try!
