FILLING:
1 large egg, room temperature

2/3 cup finely chopped pecans, divided

  • In a small bowl, beat butter and cream cheese until smooth; gradually beat in flour. Refrigerate, covered, 1 hour or until firm enough to roll., Preheat oven to 375°. 1 cup butter, softened
6 ounces cream cheese, softened
2 cups all-purpose flour
1 ½ cups firmly packed brown sugar
2 large eggs
2 tablespoons butter, melted
1 tablespoon vanilla extract
⅛ teaspoon salt
1 ½ cups chopped pecans

Steps:

  • Combine 1 cup butter and cream cheese in a bowl using an electric mixer on medium speed until creamy. Add flour gradually, beating at low speed. Shape mixture into 48 balls and place on a baking sheet. Cover and chill in the refrigerator for 1 hour.

2 1/2 cups all-puropose flour
1/2 cup granulated sugar
1/2 tsp salt
1/2 lb cold, unsalted butter, diced
For the Filling
4 eggs, beaten
1 1/2 cups dark Karo Syrup
1 1/2 cups granulated sugar
3 Tbls butter, melted
1 1/2 tsp vanilla
2 1/2 cups pecans, coarsely chopped

Steps:

  • Preheat oven to 350 degrees F. 10 x 15 Pan with 2" sides - Coated with non-stick spray For the Crust - Combine the flour, sugar, salt and butter into fine crumbs using a food processor or pastry blender. Mixture may look dry. Press firmly into prepared pan. Bake 20 minutes at 350 degrees or until golden brown. For the Filling - Combine all the ingredients and pour over the hot crust, spreading evenly. Bake 25 minutes at 350 dgrees. Cool on wire rack. Approximately 15 minutes after coming out of the oven, run a sharp knife around the edge to release bars from side of pan. Cool completely before cutting into squares. Enjoy!

3 extra-large eggs
3/4 teaspoon pure vanilla extract
4 1/2 cups all-purpose flour

1/4 teaspoon salt
1 pound unsalted butter
1 cup good honey
3 cups light brown sugar, packed
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1/4 cup heavy cream
2 pounds pecans, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour.   • For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.
