1 cup butter (room temperature)
¼ cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon kosher salt
1 cup chopped pecans (toasted and cooled)
Confectioner's sugar (as needed for rolling)

Steps:

  • Preheat oven to 300°F. Line baking sheets with parchment.
  • In a large bowl with a hand mixer (or stand mixer fitted with the paddle attachment) cream the butter, sugar and vanilla until light and fluffy.
  • On low speed add the flour, salt and pecans; mix until combined.
  • Roll into 1-inch balls and place 1-inch apart on prepared baking sheets.
  • Bake in preheated oven for 45 minutes or until the bottoms are golden brown.
  • Cool 5 minutes then roll in sugar. Cool completely and roll in confectioners sugar again.

1/2 teaspoon vanilla extract
1/8 teaspoon cream of tartar
3/4 cup granulated sugar

Steps:

  • Preheat the oven to 200 degrees F; line 2 baking sheets with parchment paper.
  • In a stand mixer fitted with a whisk attachment, add the egg whites, vanilla and cream of tartar. Beat until the mixture is frothy and soft peaks form. Gradually add the sugar 1 tablespoon at a time, waiting about 15 seconds between each addition. Once all of the sugar has been added, beat for an additional 5 minutes. 1 cup sifted cake flour
1 cup pecan halves
