  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. Spread pecans on a baking sheet and bake until fragrant, about 12 minutes. Cool 15 minutes, then coarsely chop.   • Coat the muffin cups with nonstick vegetable spray (then wipe the top of the pan with a paper towel) or coat with solid shortening.

3 teaspoons baking powder

150 g plain flour (5 oz)
1/2 teaspoon baking powder
1/4 teaspoon salt
1 egg (size 2)
40 g caster sugar (1 1/2oz)
110 ml milk (4 fl oz)
50 g butter, melted and cooled slightly (2 oz)
1/2 teaspoon pure vanilla extract
110 g small blueberries (4 oz)
100 g pecan nuts, finely chopped (4oz)
10 demerara sugar cubes, crushed
oil or butter, for brushing

Steps:

  • MUFFIN MIXTURE: Start off by sifting the flour, baking powder and salt into a large bowl.
  • In a separate bowl mix together the egg, sugar, milk, melted butter and vanilla extract.
  • Return the dry ingredients to the sieve and sift them straight on to the egg mixture. According to Delia Smith, this double sifting is essential because there won't be much mixing going on.
  • Take a large spoon and fold the dry ingredients into the wet ones - quickly, in about 15 seconds. Don't overmix.
  • Fold in the blueberries and half of the chopped pecan nuts (50g), again with a minimum of stirring.
  • Grease your muffin tins or use paper cups.
  • Spoon in just enough mixture to fill each muffin cup.
  • TOPPING: Mix the remaining pecan nuts (50g) with the crushed sugar and top your muffins.
  • Bake on a high shelf of the oven for 20 minutes for mini's or 30 minutes for regular ones. Oven temperature: 400°F / 200°C.
  • Remove the muffins from the oven and cool in the tins for 5 minutes before transferring to a wire rack. If they are in paper cases remove them from the tins straight away.

2 cups white whole wheat flour (I use King Arthur's brand)
1/4 cup brown sugar
1 1/2 teaspoons baking powder

1/2 cup real maple syrup
1/2 cup milk
1/2 cup butter, melted
1 teaspoon vanilla
1 cup pecans, chopped
1 tablespoon cinnamon sugar

Steps:

  • Preheat oven to 400 degrees.
  • Mix dry ingredients (except pecans) in large mixing bowl.
  • Beat together egg, maple syrup, milk, butter and vanilla.
  • Stir into dry mixture just until moistened. Stir in pecans.

1 3/4 cups toasted pecans
3/4 cup unsalted butter, softened, plus more for greasing muffin tins
1 1/2 cups plus 2 tablespoons sugar
1 1/2 teaspoons grated orange zest
2 eggs
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons kosher salt
3/4 cup whole milk
2 cups fresh cranberries

Steps:

  • Preheat oven to 350 degrees. Grind 3/4 cup of the pecans in a food processor and set aside. Chop the rest and set them aside. Butter 18 muffin cups very well.
  • Using an electric mixer, cream the butter and 1 1/2 cups of sugar together. Mix in the orange zest. Add the eggs 1 at a time. Mix in vanilla.
  • In a separate bowl, stir together the flour, baking powder, salt and ground pecans. Add the flour mixture to the butter mixture alternately with the milk, mixing just to combine. Gently stir in the cranberries and the chopped pecans.
  • Divide the batter among the muffin cups and sprinkle with the remaining 2 tablespoons of sugar. Bake until the tops spring back when touched in the center, about 30 minutes. Let cool in tins slightly before turning out onto a rack to cool completely.

1 teaspoon salt
1-1/2 teaspoons baking soda
3/4 cup sugar
4 large oranges
Water
2 large eggs, beaten

4-1/2 cups raisin bran cereal
1 cup chopped pecans

Steps:

  • In a large bowl, combine first four ingredients. Set aside. Remove the peel from two of the oranges. Cut all the oranges into eighths and remove seeds; puree in a blender or food processor If necessary, add enough water to puree to equal 2 cups.
