1-1/4 cups butter, softened, divided
2 cups sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup whole milk
FROSTING:
1 cup butter, softened
8 to 8-1/2 cups confectioners' sugar
1 can (5 ounces) evaporated milk
2 teaspoons vanilla extract

Steps:

  • Place pecans and 1/4 cup butter in a baking pan. Bake at 350° for 10-15 minutes or until toasted, stirring frequently; set aside., In a large bowl, cream sugar and remaining butter until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in 1-1/3 cups of toasted pecans. , Pour into 3 greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in center comes out clean. 1/4 cup milk
2 tablespoons milk
1 1/4 cups unsweetened cocoa

1/2 cup (100 g) sugar
1/3 cup (80 ml) light corn syrup
1/2 cup (125 ml) water
6 tablespoons (50 g) unsweetened Dutch-process cocoa powder
1/2 teaspoon vanilla extract

Steps:

  • Whisk together the sugar, corn syrup, water, and cocoa powder in a medium saucepan. Heat over medium heat, whisking constantly, until the mixture begins to bubble at the edges.

3 eggs
1/2 cup oil
1 1/4 cups water
1 cup brown sugar
2/3 cup whipping cream
3 tablespoons whipping cream
1/2 cup butter
1 lb powdered sugar
1/2 cup pecans, chopped
1 cup pecan halves

Steps:

  • Grease 2 9 inch pans.
  • Preheat oven to 350 degrees.
  • Combine cake mix, eggs, water and oil.
  • Bake 25 minutes.
  • Meanwhile combine brown sugar, 2/3 cup whipping cream and butter in sauce pan. Cook over medium heat stirring constantly until mixture comes to a boil. Reduce heat. Simmer stirring constantly for 1 minute. Cool to room temperature.
  • Drizzle 2 tablespoons sauce over each layer.
  • Place remaining sauce in bowl. Add powdered sugar. Beat on high til smooth, 3 minutes. Add enough whipping cream for spreading consistancy.

3/4 cup pure maple syrup
1 1/2 cups half-and-half
3 cups sugar
3 tablespoons light corn syrup
1 pinch salt
2 teaspoons vanilla extract
1 1/2 cups pecans, roughly chopped

Steps:

  • Line an 8-inch square baking pan with aluminum foil that overhangs. Coat the foil with 1 tbsp of the butter.
  • In a 3-quart heavy-bottomed saucepan over low heat, cook the maple syrup, half-and-half, sugar, corn syrup, and salt until the sugar is dissolved (about 5 minutes), stirring constantly with a wooded spoon or heatproof spatula.
  • Bring he mixture to a boil over medium heat, then brush down the sides of the pan with a pastry brush dipped in water to prevent the sugar from crystallizing.
  • Place a candy thermometer in the pan and cook the mixture without stirring until it registers 238°F on the thermometer (about 15 minutes).
  • Remove the pan from the heat, remove the thermometer and place in warm water to cool it.

  • Scrape the mixture into a stand mixer, add the vanilla, and with the paddle attachment, beat for 5-10 minutes until it looses its shine and thickens OR put in a bowl and use a wooden spoon.
  • Add chopped pecans, turn into prepared pan and use fingertips to even the top and press the fudge into the corners. Place the pan on a cooling rack and let set for 2 hours.
