Time 1h33m

Yield 24

Number Of Ingredients 11

1 cup butter or margarine, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 ¼ cups all-purpose flour
¾ cup unsweetened cocoa powder
1 teaspoon baking soda
1 cup chopped pecans, divided
1 tablespoon white sugar
5 rolls chocolate-covered caramel candies

Steps:

  • In a large bowl, cream together the butter, 1 cup white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, and baking soda; stir into the sugar mixture until well blended. Stir in 1/2 cup of the pecans. Cover, and refrigerate dough for 1 hour, or until firm.
  • Preheat oven to 375 degrees F (190 degrees C). In a shallow bowl, combine the remaining 1/2 cup pecans and 1 tablespoon of sugar; set aside.
  • Press 1 tablespoon of cookie dough around each chocolate coated caramel, forming a ball. Dip one side of each ball into the pecan mixture; and place pecan side up, 2 inches apart on ungreased baking sheets.
  • Bake for 8 minutes in the preheated oven (the cookies will look soft). Cool on the pans for one minute before removing to wire racks to cool completely.

BARBARA'S CARDAMOM COOKIES

Barbara's Cardamom Cookies image

My dear friend, Barbara Weinrich, presents my family with a beautiful tray of Christmas cookies each year. This is my favorite. I love the exotic taste of cardamom and the browned butter icing. (Scandanavian cooks have made a great contribution to Midwest baking :)

PECAN SHORTBREAD

Pecan Shortbread image

This pecan shortbread - crumbly, salty and buttery, with a touch of cardamom - is delicate in flavor but sturdy enough in structure for a dessert on the go, ready for picnics or potlucks. Make this easy shortbread a day or two before you need it. After slicing, store the pieces in a tightly closed cookie tin. They're lovely alone, just out of the tin, but you can augment them with a bowl of cherries, nectarines and peaches, or ice cream, if you wish.

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 7

1 1/2 cups/340 grams salted butter, cut into ½-inch cubes
3/4 cup/160 grams granulated sugar
1/2 teaspoon vanilla extract
1/2 teaspoon ground cardamom
3 1/2 cups/448 grams all-purpose flour
1 1/2 cups/179 grams toasted, chopped pecans
Confectioners' sugar, for dusting

Steps:

  • Heat oven to 325 degrees. Put butter, sugar, vanilla and cardamom in the bowl of a stand mixer fitted with the paddle attachment. Mix at medium speed until light and fluffy, about 5 minutes, scraping the bowl occasionally.
  • Carefully add flour and pecans, and mix a few minutes more, at low speed at first, then medium, until dough comes together. Remove dough and knead for 1 minute. Press dough into a 9-inch square cake pan. (Alternatively, press into a 9-inch fluted French tart pan with a removable bottom.)
  • Bake until golden brown, about 45 minutes. Let cool and cut into squares, bars or wedges with a serrated knife while still slightly warm. Store in a tin until needed. To serve, arrange on a plate and dust with confectioners' sugar.

Tips:

  • Use room temperature butter: This will make it easier to cream together with the sugar and will result in a more evenly textured cookie.
  • Don't overmix the dough: Overmixing can result in a tough cookie. Mix just until the ingredients are combined.
  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much in the oven. Keep chilled dough in the fridge for at least 30 minutes, or better yet overnight.
  • Bake the cookies at the correct temperature: The ideal temperature for baking pecan cardamom bar cookies is 350°F (175°C). This will ensure that the cookies bake evenly and don't burn.
  • Let the cookies cool completely before cutting them: This will help to prevent them from crumbling.

Conclusion:

Pecan cardamom bar cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their sweet and nutty flavor, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a baked good to enjoy, give these pecan cardamom bar cookies a try - you won't be disappointed!
