This easy Greek chicken and potatoes recipe is a family favorite. The secret is in the lemon-garlic sauce, which doubles up as a marinade. 3 lb chicken pieces, bone in and skin on (I used 2 breasts and 3 legs)
Salt
4 gold potatoes (about 2 lb), scrubbed clean, cut into thin wedges
1 medium yellow onion, halved then sliced
1 tsp black pepper
1 lemon, sliced
1 cup chicken broth
6 to 12 pitted quality kalamata olives, optional
Fresh parsley, for garnish
1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
1/4 cup lemon juice
12 fresh garlic cloves, minced
1 1/2 tbsp dried rosemary (or dried oregano)
1/2 tsp ground nutmeg
Greek Salad
Tzatziki Sauce
Pita Bread

Steps:

  • Preheat oven to 350 degrees F.
  • Pat chicken dry and season generously with salt (lift the skins and apply salt underneath as well). (see optional step in notes)
  • Arrange potato wedges and onions in the bottom of a baking dish or pan. Season with salt and 1 tsp black pepper. Add the chicken pieces (see optional step in notes).
  • Make the lemon-garlic sauce. In a small mixing bowl, whisk together 1/4 cup extra virgin olive oil with lemon juice, minced garlic, rosemary, and nutmeg. Pour evenly over the chicken and potatoes.
  • Arrange lemon slices on top. Pour chicken broth into the pan from one side (do not pour broth over the chicken).
  • Bake in heated oven uncovered for 45 minutes to 1 hour, until chicken and potatoes are tender. (Chicken's internal temperature should register at 165 degrees F). If you like, place the pan under the broiler briefly to allow the chicken skins to gain more color (watch carefully).
  • Remove from heat and add kalamata olives, if you like. Garnish with a little bit of fresh parsley.
  • Serve with Greek salad Taztaziki sauce and a side of pita bread, if you like. Enjoy!

3 teaspoons olive oil, divided
1 pound chicken tenderloins
2 medium tomatoes, sliced
1 cup sliced fresh mushrooms
1/2 cup chopped onion
1 tablespoon capers, drained
1 tablespoon lemon-pepper seasoning
1 tablespoon salt-free Greek seasoning
1 medium garlic clove, minced
1/2 cup water
2 tablespoons chopped ripe olives
Hot cooked orzo pasta, optional

Steps:

  • In a large skillet, heat 2 teaspoons oil over medium heat. Add chicken; saute until no longer pink, 7-9 minutes. Remove and keep warm., In same skillet, heat remaining oil; add the next 6 ingredients. Cook and stir until onion is translucent, 2-3 minutes. Stir in garlic; cook 1 minute more. Add water; bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, 3-4 minutes. Return chicken to skillet; add olives. Simmer, uncovered, until chicken is heated through, 2-3 minutes. If desired, serve with orzo.

This is a common meal enjoyed in Greece. It's incredibly delicious, and while it's cooking, the smell will have everyone in the house hanging around the kitchen. I find that the chicken stays moist if it is covered for the the first 20 minutes of baking. Serve with a crisp salad and crusty bread or pita.

8 boneless skinless chicken breast halves
2 lemons, juice of
4 -5 potatoes, peeled and sliced french-fry style
1/2 cup olive oil
1/2-1 cup water
1 head garlic, the cloves peeled but whole
4 tablespoons oregano, dried
salt and pepper

Steps:

  • Place chicken in a shallow baking dish.
  • Arrange potatoes and garlic around chicken.
  • Mix together lemon juice and olive oil, salt and pepper, and pour evenly over chicken and potatoes.
  • Add just enough water until potatoes are almost about covered.
  • Cover chicken and pototoes with 2 Tbsps. of oregano.
  • Cover with foil and bake at 350ºF. for 20 minutes.
  • Uncover, turn chicken; stir potatoes; and sprinkle on remaining oregano.
  • If potatoes aren't at least half-covered with liquid, add more water.
  • Return to oven for about 25-30 minutes.
  • Chicken is done when both sides are lightly browned and potatoes are soft.
  • Good served with crisp bread or pita.

You can reduce the fat content by not using the olive oil and herbs on the outside, then when serving don't eat the skin! Also, it is just as yummy if you omit the ham. Haven't tried it without the feta, but I imagine that would be good as well.

1 (2 1/2 lb) roasting chickens, gutted,rinsed,and patted dry
1 tablespoon garlic-flavored olive oil (or plain)
1 teaspoon oregano
1 teaspoon parsley
1/4 teaspoon garlic salt
1/4 teaspoon garlic powder
2 cups chopped fresh spinach
3 pieces thin-sliced deli-style ham, chopped
1/4 cup crumbled feta cheese
1 slice whole wheat bread, broken into small pieces
1/4 cup chopped chives
1/2 cup pine nuts
1/4 cup melted butter
1/4 teaspoon salt

Steps:

  • Preheat oven to 325.
  • Brush chicken with oil.
  • Combine oregano, parsley, garlic powder, and garlic salt.
  • Rub onto chicken.
  • Combine spinach, feta, ham, bread, pine nuts, chives, butter, and pepper.
  • Slip fingers in between skin and breast, and Lightly stuff the pockets on both sides.

2 tbsp olive oil
8 chicken thighs, skin on and bone in
300g cherry tomatoes
100g black olives
½ small pack oregano, leaves picked
200g pack feta, crumbled into chunks
2 tbsp red wine vinegar

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes in a roasting tin and drizzle with half the oil. Sit the chicken thighs on top, drizzle over the remaining oil and season. Roast in the oven for 30 mins.
  • Add the cherry tomatoes, olives, oregano leaves and feta, then drizzle with the red wine vinegar. Return to the oven for another 25-30 mins until the chicken is cooked through and golden.
