3/4 cup quick-cooking barley

10 ounces frozen mixed vegetables (peas, carrots, beans, corn)
1 large bay leaf
1/4 teaspoon thyme

Steps:

  • In a large pot, brown lamb, onion and celery only until lamb is no longer pink.
  • Drain off fat.

2 tablespoons tomato paste
2 tablespoons balsamic vinegar, plus more for seasoning, if desired
2 cans (14 1/2 ounces each) diced tomatoes in juice
2 cans (14 1/2 ounces each) cannelini beans or chickpeas, rinsed and drained
1 bunch (about 1 pound) broccoli rabe, cut crosswise 1 inch thick and well washed, with water still clinging to it (blanched if desired)
4 thick slices rustic whole-wheat bread, toasted

  • Heat oil in a large saucepan over medium heat and add onion and garlic. Season with salt and pepper; cook, stirring frequently, until onion is softened, 4 to 5 minutes.

½ pound bacon, cut into small pieces
2 onions, chopped
¼ cup chopped shallots
1 leek, sliced

1 1/2 c. dried white beans (Great Northern, etc.) or 2 16 oz. cans.
4 T. bacon fat or litely salted butter
1 c. finely chopped yellow onions
3 leeks, white parts only, thoroughly cleaned and thinly sliced
2 celery ribs, cleaned and coarsely chopped
3 carrots, peeled and chopped
2 c. green beans
1 32 oz can chopped tomatoes with juice
2 c.sliced zucchini
1 t dried thyme
1 bay leaf
8 c. chicken broth or beef broth or a combination of the two (Sounds better as it goes...)
3 parsnips, peeled and chopped
1 ham hock
1/2 small white cabbage, shredded about 2 c.
4 garlic cloves, peeled and chopped
1/2 c. chopped Italian parsley
salt and pepper to taste

Steps:

  • If using dried beans, sort thru the beans and discard any pebbles. Soak overnight in water that covers them by 3 inches. Melt the bacon fat or butter in a heavy soup pot. Add onions, leeks, celery and carrots and cook covered over low heat til veggies are tender and lightly colored about 25 min. stirring occasionally. Stir in thyme, bay leaf and a grinding of pepper, pour in the stock. Add parsnips, ham hock, green beans and zucchini and soaked beans and bring to a boil. Reduce heat and simmer partially covered til beans are tender about 40 min. Remove ham hock aallow it to cool slightly. Cut the meat off and cut into chunks and return to pot. Add cabbage, garlic and parsley and simmer for another 5-10 mnutes. Taste, correct seasonings, adding salt at this point if it needs it. Serve immediately.

10 oven roasted garlic cloves (20 min in oven with olive oil)
1 teaspoon italian seasoning (emerils is good)
1 teaspoon onion powder
1 teaspoon of good sweet smoked paprika (health food store has the best)
1 loaf day old hard bread (french,artison or bagget)
1/2 cup chanterelle mushroom (button mushrooms are good) (optional)
parmesan cheese (optional) or smoked gouda cheese (optional)

Steps:

  • put chicken stock in a pot.
  • add oven roasted garilc and the rest of the spices (and mushrooms).
  • bring to a boil on med heat then low and cover for 30 min.
  • cut bread into 1/2 inch rounds and brush with olive oil.
  • toast in a pan till brown (i like mine dark).
  • warm soup bowls in the oven or microwave.
  • pour soup into bowls.
  • spilt bread into bit size pieces and put in soup top with cheese.
  • let stand 5 minute.

  • also need (bottle red Bordeaux wine, for the chef and the last few swallows of soup).
  • Heat a coup pot over medium high heat with olive oil.
  • Add the vegetables and ham to the pot as you chop them.
  • Add cabbage to the pot and sprinkle with sugar and salt.
  • Add 2 cups of water and cover.
  • Steam the cabbage for 15 minutes.
  • Uncover the pot and add the broth and beans. Bring to a boil.
  • Reduce heat and keep at a low simmer.
  • Adjust the salt and pepper. Serve with crusty bread, and don't forget to down the last few swallows with your trusty Bordeaux!

2 medium onions, chopped
6 clove garlic, chopped
1 lb boneless, skinleess chicken breasts, cut into 1-inch pieces.
2 can(s) (15 oz.) cannelini beans, rinsed and drained
1 can(s) (49.5 oz.) chicken broth
2 can(s) (14.5 oz.) diced tomatoes
1 tsp dried basil
1 tsp dried oregano
fresh spinach, chopped, up to 6 cups
freshly grated parmesan cheese

Steps:

  • 1. In a large skillet, brown sausage over medium heat. Drain and remove to crock pot. In same skillet, add onion, garlic, and chicken. Cook until chicken is done. Remove to crock pot.
  • 2. Add remaining ingredients, except spinach and Parmesan, to the crock pot. Cook on high about 4 hours, or low 8 hours.
  • 3. During last 15-30 minutes of cooking, add chopped spinach.

6 Large red potatoes srubbed and sliced
2 Large red Onions chopped and caramelized
7 cups veggie stock
Celtic sea salt and freshly ground

chopped Flat leaf parsley for garnishing

  • 1. Preheat oven to 200C/400F 2. Place the whole unpeeled garlic bulbs in a small tray and bake for about 30 minutes. 3. Parcook the potatoes in boiling water for about 10 minutes. 4. Stir fry the onions until caramelized. 5. Bring the veggie stock to the boil, and simmer for about 5 minutes, and then add the drained potatoes. 6. Squeeze the roasted garlic pulp into the soup, season to taste, and stir through. 7. Simmer for about 15 minutes until potatoes are cooked through, and the flavours infuse. 8. 2 can(s) creamed corn
1/2 stick butter
2 stick cracker barrel aged reserve cheddar

3 medium cooking potatoes
2 carrots
1/2 medium white onions
7 oz canned mushrooms, bits & pieces, drained
1 c green beans, frozen or fresh will work
1/2 c red wine, dry, full bodied
5 c beef stock
1 tsp worchestershire sauce
3 bay leaves
1 tsp crushed leaf basil
1/2 tsp leaf oregano
1 clove garlic, minced
ground black pepper to chef's taste

Steps:

  • 1. Brown the sausage, after browning the sausage, remove as much of the grease from the sausage as you can with paper towels. Bias cut the sausage into ¾ inch pieces and place in the crock pot.
  • 2. Scrub clean and dice into slightly larger than bite size the potatoes, place in crock pot.
  • 3. Take your 2 stalks of Celery and the 2 Carrots, scrub clean removing the undesired portions by trimming the celery and carrots, then rough chop them and place them in the crock pot. Rough chop your ½ of a white onion, toss that right in too!
  • 4. Add mushrooms, frozen or fresh green beans, and all other fluids in the ingredient list.
  • 5. Add all recommended spices, give it a good stir to mix it all up in the crock pot, cover it and cook
  • 6. Crock pots vary in cooking times, mine runs a higher temperature than most. But as a general rule, allow at minimum 7 hours on low setting, or if you need it quicker, then go at least 4 hours on high.
  • 7. Try to combat the temptation to take the lid off and check the progress of the cooking too often, this will extend cooking times and will also diminish flavor. However, half way through your desired cook time, give it another good stir, cover and walk away.

2 can(s) cannellini beans--rinsed & drained
2 can(s) chicken broth--low sodium
2 can(s) diced tomatoes--undrained
1 tsp oregano--dried
1 tsp basil--dried
6 c spinach--fresh--chopped
shredded parmesan (opt)

Steps:

  • 1. IN DUTCHOVEN OR LG PAN, ADD ONIONS,GARLIC,--SAUTE UNTIL DONE. ADD CHICKEN CUBES, CHICKEN BROTH, TOMS., BASIL, OREGANO. COOK UNCOVERED UNTIL CHICKEN IS TENDER (OR YOU CAN PRE-COOK THE CHICKEN AHEAD OF TIME TO HASTEN THE TOTAL COOKING TIME)
  • 2. ADD CHOPPED SPINACH, HEAT UNTIL WILTED & DONE.
  • 3. CAN SERVE WITH PARMESAN CHEESE SPRINKLED ON TOP WHEN SERVING
