I came across the recipe after becoming addicted to their bread and craving it constantly (thanks to Google search and Cafe Michele). It's a great bread to tear and dip in flavored olive oils and to serve with your best Italian pasta dishes, or soups.

3/4 cup water
2 tablespoons olive oil
2 cups flour
1 tablespoon salt

Steps:

  • Place ingredients, according to manufacturer's directions into your bread machine.
  • (some call for all liquids, or all dry ingredients first, so know your machine) Set machine to "dough cycle" and wait. (This takes most machines about an hour and a half for a full cycle).

  • Shape dough by hand, into a rectangular mound, spreading kind of thin, maybe an inch or two of thickness.

2 cups plus 1 tablespoon warm water, 100 to 110 degrees
1 1/4 teaspoons active dry yeast
1 cup Sponge, pulled into small pieces
6 cups bread flour
1/2 cup white, light, or medium rye flour
1 tablespoon salt

Steps:

  • In the bowl of an electric mixer, combine 1/4 cup water and yeast. Let stand until yeast is foamy, about 10 minutes. Add 1/2 cup more water and sponge; mix on low speed using paddle, about 2 minutes. Add flours, salt, and remaining water; mix 1 minute more. Using dough hook, mix on medium-low speed, pulling dough from hook 2 or 3 times, until dough is soft and sticks to fingers when squeezed, about 8 minutes. Or knead by hand, 15 to 20 minutes.
  • On a floured surface, knead dough into a ball by hand, 4 or 5 turns. Place smooth side up in a lightly oiled bowl. Cover with plastic wrap; let rise in a warm place until tripled in bulk, about 3 hours.

Using a baker's peel or baking sheet, slide loaves and parchment onto the baking stone or baking sheet. Pour 2 cups very hot water into the heated baking pan to create steam. Bake until dark golden brown and hollow sounding when tapped on the bottom, 25 to 30 minutes. Transfer to a wire rack to cool for at least 30 minutes before slicing.

1/2 teaspoon dry yeast
3/4 cup flour
2 1/2 cups water
1/2 teaspoon dry yeast
5 -6 1/2 cups flour
2 teaspoons salt
1 teaspoon olive oil, for top of raising dough

  • Starter: The water should be at room temperature.
  • Combine the water and yeast in a small bowl.
  • Let stand I minute, then stir until yeast is dissolved.
  • Add the flour.
  • Stir vigorously for about 100 strokes.
  • Scrape down the sides of the bowl then cover with a clean towel or plastic wrap.
  • Place in a warm (75 F) place until mixture is bubbly (2 -10 hours).
  • Place the starter into a large (6-quart+) bowl.
  • Dough: Add the water and yeast to starter.
  • Add 1 cup, of flour and stir until it is well combined.
  • Add the salt and only enough of the remaining flour to make a thick dough that is difficult to stir.

3 cups lukewarm water
1 1/2 tablespoons granulated yeast
1 1/2 tablespoons salt
1/2 cup rye flour
1/2 cup whole wheat flour
5 1/2 cups unbleached all-purpose flour
cornmeal, for the pizza peel

Steps:

  • Mixing Instructions:.
  • Mix the yeast and salt with the water in a 5 quart bowl or a lidded (not airtight) food container.
  • Mix in the remaining dry ingredients without kneading, usings a spoon or a heavy-duty stand mixer with dough hook.
  • Note: If not using a mixer you may need to use wet hands to incorporate the last bit of the flour.
  • Cover (not airthight) and allow to rest at room temperature until the dough rises and collapses (or flattens on top), approximately 2 hours.
  • The dough can be used immediately after rising, however it is easier to handle when cold.
  • Refrigerate in a lidded (not airtight) container and use over the next 14 days.
  • Baking Instructions.
  • Dust the surface of the refrigerated dough with flour and cut off a grape fruit size piece (1 lb.).
  • Dust with more flour and quickily shape into a ball by stretching the surface of dough around to the bottom on all four sides, roating the ball a quarter-turn as you go.
  • Place on cornmeal-dusted pizza peel and allow to rise for 40 minutes.
  • 20 minutes before baking time, preheat oven to 450º F, with a baking stone placed on the middle rack.
  • Place a cast iron skillet or empty broiler tray on the bottom rack.
  • Sprinkle loaf liberally with flour and slash the top using a serrated bread knife.
  • Slide loaf directly onto the hot stone.
  • Pour 1 cup of hot tap water into the skillet or broiler tray and quickly close the door.
  • Bake for 35 minutes or until top of crust is dark brown and sounds hollow when thumped.

3 cups all-purpose flour
1 cup graham flour
2 teaspoons kosher salt
2 cups luke-warm water
1 tablespoon coconut sugar
2 teaspoons active dry yeast
2 tablespoons butter (at room temp)

Steps:

  • In a mixing bowl whisk the flours and the salt. Set aside.
  • Grease a separate large bowl with butter or olive oil and set this aside. (This bowl will be used for the dough's initial rise).
  • In a standing-mixer's bowl, dissolve the sugar into the water. Sprinkle the yeast over the top. (If you'd like . at this point . to ensure the yeast is active . you could let the mix stand for 10-15 minutes . or until it's foamy and/or bubbling just a bit. I typically don't).
  • Add the flours and salt.
  • Mix (**Note: The original recipe outlines stirring with a wooden spoon, which works . but I like to use my mixer with the dough hook and let it go for 4 or 5 minutes on medium speed) Note: the dough will be on the wet side. Transfer the dough to the greased bowl from the preparation step.
  • Cover bowl with a towel or plastic wrap and set aside in a warm spot to rise for at least an hour . or until it's about doubled in size.
  • ** Typically, dough at our house takes 3 or 4 hours to double . point being . don't sweat the exact time.
  • Grease 2 oven-safe bowls with about a Tbsp of butter each.
  • Preheat the oven to 425ºF.
  • Punch down your dough . and divide it into 2 equal parts. One by one . place each half on a floured counter-top. Quickly form a ball with each part & transfer them to your prepared bowls.
  • At this point . the original recipe calls for letting the dough rise until it's doubled again in size . and this certainly works. I've taken to putting the dough into the fridge overnight for its second rise. There's something that happens to dough when it ferments for a long period of time in a cool environment.
  • Pre-heat oven to 425.
  • Bake for 10 minutes at 425. Reduce the heat to 375º and bake for 18-19 minutes longer. Remove from the oven . letting the loaves sit for 5-10 minutes before turning them over onto cooling racks.
  • If the bowls have been greased well . the loaves should easily fall out out onto the cooling racks.
  • You'll have to gauge it based on taste . I cook the loaves on the lower end of the time the original calls for because we like them pale & soft. If that's not for you . they can always be placed back into the oven (outside their bowls) and baked for about 5 minutes longer.
  • Remove from oven and let cool for 10 minutes before cutting.

5 1/2 cups all-purpose flour (divided)

1 egg white for wash on dough

Steps:

  • Preheat oven to 400 degrees fahrenheit. Put the 2 packages of yeast in a room temperature large mixing bowl. Add ½ cup of the warm water (about 110-120 degrees) and whisk dissolving the yeast. Let it sit for about 15 minutes. Add the remaining water to the yeast and gently whisk together. Sift 4 cups of sifted flour and salt into a second mixing bowl. Pour half of the flour into the wet mixture and blend well. Add the remaining flour and blend well. Put the remaining flour on a clean surface. Dump out the dough and knead for about 5 minutes. (Note: leave the flour on this surface because you will knead a second time) Coat a clean large bowl with cooking spray. Form the dough into a large ball, put in the bowl, cover with a clean dish towel and place in a draft free area and let the dough rise until about double in size (an hour or more). (Note: I put mine in a cold oven. Turn on the light and let it rise. ) After the dough has raised, dump onto the flour surface and knead another 5-7 minutes. Shape into desired bread loaves, make slits (about ½" deep) on top with a sharp knife, cover and let it raise again for about 30 minutes. 2 can(s) creamed corn
1/2 stick butter
2 stick cracker barrel aged reserve cheddar
1/4 c worcestershire sauce
1 c guinness or sherry
5 Tbsp dill
1 Tbsp paprika or cayenne
3 Tbsp lemon pepper salt
2 Tbsp celery salt
4 c seasoned panko bread crumbs

Steps:

  • 1. Place all ingredients, save the panko, in a heavy bottomed, lidded pot. Cook on low, covered, for 1 hour, stirring occasionally.
  • 2. Remove from heat. Blend with an immersion blender. If not available, use blender or food processor.
  • 3. When well blended and frothy, add the bread crumbs. Continue to immersion blend, until the crumbs thicken the soup. Serve immediately.

Number Of Ingredients 7

1 (2 1/4 teaspoon) package active dry yeast
2 cups warm water, divided
4 cups all-purpose flour
2 teaspoons salt
1 tablespoon sugar
1 tablespoon butter, melted
parmesan cheese or cinnamon sugar, mixture

Steps:

  • Dissolve yeast in 1 cup warm water.
  • In a large bowl, combine flour, salt and sugar.
  • Add the yeast mixture and remaining 1 cup of warm water; stir until combined.
  • Cover and let rise in a warm place until doubled. (About 1 hour).
  • Stir dough down.
  • Divide in half.
  • Place each half in a greased 1 quart round casserole or ovenproof bowl.
  • Brush tops with melted butter and sprinkle with topping.
  • Let rise in a warm place until doubled; about 45 minutes.
  • Bake at 350 degrees for 30 minutes or until top is golden brown.
  • Remove from pans to cool.

FRENCH PEASANT BREAD

Thanks to Lara's recipe shoebox Very simple no fuss ,economical bread using only 5 ingredients. This isn't my recipe,but I use this bread in a recipe I posted called "Boiled Water" Soup. This bread is very good at any time though.

1 Tbsp yeast quick rising,dry
2 c warm water( 110 degrees or so)
1 Tbsp sugar
1 tsp salt
4 c all purpose flour
olive oil, for greasing the pan
corn meal ,for pan
butter, melted for brushing on top

Steps:

  • 1. Place yeast, water, sugar, and salt in warm bowl and stir until dissolved. Add flour and stir until blended, but do NOT knead.Cover and let rise one hour or until double in size.
  • 2. Flour hands, remove dough from the bowl and place in 2 roughly equal rounds on an oiled cookie sheet sprinkled with corn meal (dough may be sticky and not hold its shape well--that's okay. It's not supposed to be pretty.) Let rise an additional 20-30 minutes.
  • 3. Brush the tops and sides of the rounds with melted butter and bake at 425 degrees for 10 minutes. Reduce oven temperature to 375 degrees and cook an additional 15 minutes, or until golden brown. Remove from oven and brush tops and sides of rounds again with melted butter. Serve warm. Enjoy!

1 to 2 tablespoons olive oil
1 clove garlic, minced
1/8 teaspoon pepper
