1 lb (450 grams) Peas, fresh or frozen
1/2 lb (220 grams Short shaped pasta (shells, elbows, ditaloni...)
1/2 cup (50 grams) grated parmesan cheese, plus more to serve
2 cups (500 ml) vegetable broth or water, plus more if needed
1 small onion, diced
1 Tbsp olive oil, plus more for drizzling
salt & pepper, to taste

Steps:

  • Warm the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, about 5 minutes.
  • Add the peas and cook stirring frequently about 1 minute.
  • Then add vegetable broth (or water), raise the heat, bring to a boil and stir in pasta and salt (I use 1 tsp of salt and then I adjust the seasoning at the end).
  • Reduce the heat, cover with a lid, and cook your pasta in the starchy water. During the cooking time, you need to stir often until the water is absorbed, otherwise, it will stick to the bottom. The water should barely cover the pasta, but it's fine, add extra water gradually only if needed.
  • Cook until ready but firm to the bite. Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.
  • Serve immediately with a drizzle of olive oil, black pepper, and extra parmesan cheese if you like. Enjoy!

1 small onion, chopped
2 garlic cloves, finely chopped
1 carrot, finely sliced in lings
5 cups chicken stock or 5 cups vegetable stock
1/4 cup small shell pasta (stellini, tubetti, orzo...)
2 cups frozen green peas
1/3 cup parmigiano

Steps:

  • In a large saucepan, heat oil at medium heat. Add onion, garlic and carrot. Cook, stirring often, for about 5 minutes or until onion has softened.
  • Add stock and pasta. Bring to boil. Reduce heat to low and let simmer for 8 minutes.

2 garlic cloves

italian seasoning (mix of oregano, basil, parsley)
1 (28 ounce) can tomato sauce
14 ounces water
1 (8 ounce) package frozen peas
1 lb macaroni

Steps:

  • Saute onions in olive oil. When onions are soft, saute garlic quickly.
  • Add tomato sauce and 1/2 can water.
  • Add seasonings to your taste. (I prefer a lot of red pepper to make the sauce hot).
  • Simmer covered for about 45 minutes. Add peas during last 20 minutes of cooking.
  • Prepare macaroni (elbows or small shells) as directed on box.
  • Serve in a big bowl with lots of sauce. I prefer it as a soupy pasta. Add grated cheese. Delicious with bread and a glass of wine.

It begins with sautéing onion, tomatoes, garlic and rosemary in olive oil, then tossing in the chickpeas, and smashing a few to give the stew a creamy texture. Water is added, then uncooked pasta, which cooks as the stew simmers (and results in one less dish for you wash). Escarole is folded in right before serving. This flexible stew can go in a number of directions, so tweak it as you see fit, but don't forget to finish each bowl with grated pecorino and a drizzle of olive oil. Ciao.

1 (15-ounce) can chickpeas, rinsed

4 cups roughly chopped escarole, Tuscan kale or radicchio
