Provided by Turnips2Tangerines

Number Of Ingredients 12

1 can (16 oz) Bartlett pear halves
2 1/2 cups all-purpose flour
1/2 cup sugar
3 t baking powder
1 t salt
1/8 t allspice
1/4 cup vegetable oil
1 large egg, beaten
2 t grated orange rind
1/2 cup chopped walnuts
1 cup sifted powdered sugar
2 T orange juice

Steps:

  • Drain pears, reserving syrup; reserve 1 pear half for topping. Process remaining pears in a blender or use an immersion blender, process until smooth; transfer to a 1-cup measuring cup. Add as much of the reserved pear syrup as needed to make 1 cup. Reserve remaining syrup for other use. Mix flour, sugar, baking powder, salt and allspice in large bowl. Mix pear puree, oil, egg and orange rind in medium bowl. Add to flour mixture; stir just until moistened. Fold in walnuts; batter will be stiff. Spoon batter into greased 8 x 4 inch loaf pan. Cut reserved pear half into 6 slices; arrange crosswise in a row on top of batter. Bake in preheated oven at 350 for 50-55 minutes or until wooden toothpick comes out clean. Cool in pan on wire rack, 5 minutes. In a small bowl, mix powdered sugar and as much of the orange juice as needed to make a thin, smooth glaze. Remove bread from pan; spoon glaze on top of bread. Cool completely on wire rack. Wrap bread in aluminum foil; let stand overnight before slicing.

Tips:

  • Choosing the Right Pears: Opt for ripe but firm pears that are not too soft or bruised. This will ensure a moist and flavorful bread.
  • Preparing the Pears: Peel and core the pears before chopping them into small pieces. This will help them distribute evenly throughout the bread.
  • Measuring the Flour: Use the spoon and level method to measure the flour. This will prevent you from overpacking the measuring cup, which can result in a dry and dense bread.
  • Mixing the Batter: Mix the wet and dry ingredients separately before combining them. This will help prevent overmixing, which can toughen the bread.
  • Baking the Bread: Bake the bread in a preheated oven until a toothpick inserted into the center comes out clean. Overbaking can dry out the bread.

Conclusion:

Pear nut bread is a delicious and versatile treat that is perfect for breakfast, lunch, or a snack. With its moist texture, sweet pear flavor, and crunchy walnuts, it is sure to be a hit with everyone. Whether you are a seasoned baker or a beginner, this recipe is easy to follow and will yield a delicious and satisfying loaf of bread.
