A "must" at our family reunions is this easy make-ahead gelatin salad. Try decorating the top with maraschino cherries. The red and lime-green color is especially pretty for the holidays.

1 can (15 ounces) pear halves
1 package (3 ounces) lime gelatin
1 package (8 ounces) cream cheese, cubed
1 can (20 ounces) unsweetened crushed pineapple, well drained
1 cup chopped pecans, toasted, divided
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • Drain pears, reserving juice; set pears aside. In a small saucepan, bring juice to a boil. Stir in gelatin until dissolved. Remove from the heat; cool slightly. , In a food processor, combine pears and cream cheese; cover and process until smooth. Transfer to a large bowl; stir in gelatin mixture until blended. Stir in the pineapple and 3/4 cup pecans. Fold in whipped topping. , Pour into an ungreased 11x7-in. dish. Refrigerate until set. Sprinkle with remaining pecans. Cut into squares.

1 (.6 ounce) package sugar-free lime Jell-O®
1 cup boiling water
1 (15.25 ounce) can pear halves in juice
1 (3 ounce) package reduced-fat cream cheese, softened
1 ½ cups reduced-fat frozen whipped topping, thawed

Steps:

  • Whisk together the lime gelatin and boiling water in a large bowl until the gelatin dissolves. Pour the mixture into the container of a blender, and add the pear halves and cream cheese. Cover and blend until smooth. Pour back into the bowl, and gently whisk in the whipped topping. Transfer to a mold or serving bowl, cover and refrigerate until firm, at least 4 hours. 1 can (29 ounces) pear halves in juice
1 package (3 ounces) lime gelatin
3 ounces cream cheese, cubed
1 cup whipped topping

1 cup boiling water
1 (15.25 ounce) can pear halves in juice
1 (3 ounce) package reduced-fat cream cheese, softened
1 1/2 cups reduced-fat frozen whipped topping, thawed

Steps:

  • 1. Whisk together the lime gelatin and boiling water in a large bowl until the gelatin dissolves. 2. Pour the mixture into the container of a blender, and add the pear halves and cream cheese. Cover and blend until smooth. (OPTION: Cut pears into small pieces, and do NOT blend in with remaining ingredients.) 3. Pour back into the bowl, and gently whisk in the whipped topping. I got this recipe out of a Taste of Home cook book serveal years ago. My 91 year old father loves it. Changed everything to sugar free.

1 can(s) 29 oz. pear havles in juice
1 box 3 oz sugar free lime gelatin
1 3 oz. cream cheese, cubed and softened
1 c cool whip. i just use the smallest size
1 1/2 c water

Steps:

  • 1. Drain pears, (save the jusice is you don't care about the sugar). I rinse the pears to remove as much sugar as possible. Set pears aside.
  • 2. You will 1 1/2 cup liquid. I use water or you can use the pear jiuice and add water if needed
  • 3. Pour liquid into a sauce pan, bring to a boil. Add gelatin: stir until dissolved. Gradually add cream cheese, whisking until smooth. Cover and refrigerate until cool.
  • 4. Mash pears, fold into gelatin mixture. Fold in whipped topping. Pour into a 6 cup serving bowl. Refrigerate until set.

Tips:

  • Use ripe pears that are slightly firm to the touch. This will ensure that they hold their shape when cooked.
  • If you don't have a lime, you can substitute lemon juice. However, lime juice will give the gelatin a more tart and refreshing flavor.
