As delicious and impressive as pie, but half the work! This homemade pear galette is the easiest fall dessert.

Number Of Ingredients 12

1 refrigerated pie crust dough (I prefer Pillsbury brand*)
3-4 slightly firm but ripe Bartlett or Anjou pears (peeled, cut into thin slices, lengthwise)
1/4 cup granulated sugar
2 tablespoons flour or cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1/2 tablespoon butter (cold and cut into 4 pieces)
1 egg (beaten)
Coarse turbinado sugar or granulated sugar (for sprinkling)

Steps:

  • Line a rimmed baking sheet with parchment or a silicone mat and spray with cooking spray. Set aside.
  • Remove the dough from the refrigerator and let stand for 15 minutes. Place the dough between 2 sheets of lightly floured waxed paper and roll out into an 11-inch circle. Brush off the excess flour. Transfer the dough to the prepared baking sheet, cover with plastic wrap and refrigerate for 15-30 minutes.
  • Meanwhile, preheat oven to 400 degrees F.
  • In a large bowl, stir together the pears, sugar, flour, cinnamon, ground ginger, salt, lemon juice and zest. Gently toss the pears to coat.
  • Arrange the pear filling in the center of the dough, mounding the fruit slightly and leaving a 2-inch border. You can arrange the pears in a spoke pattern or keep it rustic. Gently fold the edges of the dough (outer 2 inches) over the pears, overlapping where necessary and pressing gently. It doesn't have to be perfect. Dot the cold butter onto the top of the pear filling. Brush the dough with the beaten egg (you won't need all of the egg). Lightly sprinkle sugar over the pears and on the crust.
  • Bake at 400 degrees F. for about 20 minutes or until crust is golden brown. Transfer the baking sheet to a wire rack to cool for at least 20 minutes. Serve warm or at room temperature. Best served with vanilla ice cream or whipped cream. Enjoy!

1/2c Mascarpone
4-5 Medium Bosc Pears (replace with any pear variety)
1tsp cinnamon
1tsp nutmeg
2tbs sugar
1/3c pecans
2 Sheets of Pre-Packaged Puff Pastry Dough
1 Medium Egg

Steps:

  • Slice pears into 3/4 inch slices
  • Add spices to sliced pears and set to the side
  • Roll out both sheets of pre-packaged dough to make one large sheet
  • Place dough onto a large sheet pan
  • Spread mascarpone evenly across the dough, leave about 2 inches of space around the edges
  • Place pears in the center of rolled out dough
  • Flip edges towards the pear filled center to create a wall for the filling
  • Brush dough with egg wash
  • Sprinkle with pecans, raw sugar, and cinnamon and nutmeg
  • Bake at 400 degrees for 40 minutes, or until crust is golden brown
  • Let galette cool for about 5 minutes

2 firm but ripe large Bosc pears, peeled, halved, cored
2 tablespoons fresh lemon juice
1 cup water
1/2 cup dry white wine
6 tablespoons honey
1/2 vanilla bean, split lengthwise
1/2 cup mascarpone cheese*
2 teaspoons sugar
2 teaspoons brandy or dark rum

Steps:

  • Toss pears with lemon juice in large bowl. Set aside. Combine 1 cup water, wine and honey in medium saucepan. Scrape in seeds from vanilla bean; add bean. Stir over medium heat until honey dissolves. Add pears. Cover mixture with round piece of parchment paper. Reduce heat to medium-low. Simmer until pears are just tender when pierced, turning when half-way through cooking, about 15 minutes.
  • Using slotted spoon, transfer pears to large bowl. Boil poaching liquid until reduced to 3/4 cup, about 2 minutes. Cool syrup. Pour syrup over pears. Cover and refrigerate until cold, at least 8 hours or overnight. Remove vanilla bean.
  • Whisk mascarpone cheese, sugar and brandy in large bowl until smooth. Add 1/4 cup chilled poaching syrup and whisk until soft peaks form.
  • Thinly slice each pear half lengthwise, leaving slices attached at stem end. Using metal spatula, transfer pears to plates. Gently press on pears to fan slightly. Spoon some syrup over pears. Spoon mascarpone cream alongside each pear half and serve.
