GINGERSNAP CRUMB PEAR PIE

Gingersnap Crumb Pear Pie image

This basic recipe was one my grandmother used for making crumble pies from fresh fruit. She simply substituted oats, gingersnaps or vanilla wafers depending on the fruit. Pear was always my favorite, and I added the ginger and caramel to give it a new twist. -Fay Moreland, Wichita Falls, Texas

1 flaky pie dough
1 large egg, beaten with
1 tablespoon milk or 1 tablespoon cream
1 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup packed light brown sugar
12 gingersnaps, crushed
1/8 teaspoon ginger
1/8 teaspoon salt
1/2 cup unsalted butter, melted and cooled
2 lbs ripe Anjou pears (about 5, peeled, halved, cored and sliced 1/4 inch thick)
1 1/2 cups fresh cranberries
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
1/2 teaspoon pure vanilla extract
3/4 cup sugar
2 tablespoons cornstarch

Steps:

  • On a lightly floured surface, roll out the Flaky Pie Dough to a 12-inch round and fit it into a 9-inch deep dish glass pie plate. • MAKE THE TOPPING: In a medium bowl, stir together the flour, granulated sugar, brown sugar, gingersnap crumbs, ginger and salt. Stir in the melted butter until large crumbs form.
  • MAKE THE FILLING: Preheat the oven to 350°. In a large bowl, toss the pears with the cranberries, lemon juice, lemon zest and vanilla. In a small bowl, toss the sugar with the cornstarch, then stir the sugar into the fruit.
  • Pour the fruit into the chilled pie shell. Pour the gingersnap crumbs onto the pie, carefully spreading them to the edge to cover the filling completely. Set the pie on a foil-lined baking sheet. Bake on the bottom rack of the oven for 1 1/2 hours, or until the crust is golden and the filling is bubbling; cover the pie loosely with foil if the top is browning too quickly. Let cool before slicing.

PEAR CRUMB PIE

Pear Crumb Pie image

This was a recipe in the Acton Fall Fair baking category. Very nice and light, love the delicate pear flavour. And I was very proud when mine took 1st place in the category, woot!

Provided by MummaKat

Categories     Pie

Time 1h5m

Yield 1 pie, 8 serving(s)

Number Of Ingredients 8

4 cups sliced pears
2 tablespoons lemon juice
2/3 cup sugar
1 1/2 teaspoons quick-cooking tapioca
1/2 cup flour
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter

Steps:

  • Prepare pastry for one 9" unbaked pie shell.
  • Combine pears, lemon juice, sugar, and tapioca. Mix all together and turn into pastry-lined pie plate.
  • Prepare topping by combining flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle crumbs on top of pear mixture.
  • Bake at 400F for 10 minutes. Reduce heat to 350F and bake until nicely browned, about 40-50 minutes more.

Tips:

  • For the best flavor, choose ripe, firm pears. Bartlett and Anjou pears are good choices.
  • Be sure to peel and core the pears before slicing them. This will help to prevent the pie from becoming too mushy.
  • If you don't have time to make your own pie crust, you can use a store-bought one. Just be sure to thaw it according to the package directions.
  • To make the crumb topping, you can use a food processor or a pastry blender. If you're using a food processor, be careful not to overprocess the mixture. You want the crumbs to be coarse, not fine.
  • Be sure to preheat your oven before baking the pie. This will help to ensure that the crust cooks evenly.
  • Bake the pie until the crust is golden brown and the filling is bubbling. This will take about 1 hour.
  • Let the pie cool for at least 30 minutes before serving. This will help the filling to set.

Conclusion:

Pear crumb pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its flaky crust, sweet and juicy filling, and crunchy crumb topping, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this pear crumb pie a try.
