2 ounces olive oil
6 shallots, sliced
1 clove garlic, crushed
2 tablespoons chopped fresh tarragon
1 tablespoon English mustard
6 boneless skinless chicken breasts
1 tablespoon flour
2/3 cup chicken stock
1 apple, diced finely
1 tablespoon chopped walnuts
1 tablespoon heavy cream
salt and pepper
3 1/2 cups cooked rice
2 large pears, diced
1 cup blue cheese, diced
1 red bell pepper, diced
1 tablespoon chopped fresh coriander
1 tablespoon sesame oil

Steps:

  • In a deep bowl, mix olive oil, shallots, garlic, tarragon and mustard.
  • Salt and pepper to taste.
  • Place the chicken breasts in this mixture, coating well.
  • Chill for 4 hours.
  • Drain the chicken, reserving the marinade.
  • Quickly fry the chicken in a deep non-stick pan for 4 minutes on each side.
  • Transfer the chicken to a large serving platter.
  • Add the marinade to the pan, bring to a boil and sprinkle with the flour.
  • Add the chicken stock, apples and walnuts.
  • Gently simmer for 5 minutes.
  • Return the chicken to the pan with the sauce in it.

3 tablespoons extra-virgin olive oil, plus oil for brushing
1 cup whole wheat spelt berries
Four 6- to 7-ounce boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
Juice of 1 lemon
2 firm, but ripe eating pears such as Anjou, Bartlett or Comice, cored
1/4 bulb fennel
2 bunches watercress, stems trimmed (about 6 cups)
One 2- to 3-ounce piece Gruyere or aged Gouda

Steps:

  • Preheat the grill to medium heat and brush some oil onto the grates.
  • Bring a medium saucepan of water to a boil. Add the spelt and return to a boil. Lower the heat to a simmer, cover, and cook until the berries are tender but not mushy, 15 to 20 minutes. Drain and set aside.

½ cup crumbled Gorgonzola cheese
2 pears, halved, cored and sliced
14-16 oz. mixed salad greens

Steps:

  • In bowl, whisk together olive oil, vinegar, mustard, salt and pepper to taste. Add chicken, walnuts and Gorgonzola cheese and toss lightly. Place greens on individual salad plates. 2 stalks chopped celery
1/8 c chopped red onion
1 chopped pear with skin on
1 c white grapes chopped

1/4 tsp dill weed
1/4 tsp paprika
1 pinch salt and black pepper
1 Tbsp dijon mustard
1 tsp honey
bulky rolls or wraps
