Time 1h15m

Number Of Ingredients 17

1/2 cup vegetable oil, plus oil for greasing pans
1 cup freshly pureed ripe pears (about 2 medium-size, peeled and cored)
1 egg, slightly beaten
2 teaspoons grated lemon peel
1/4 cup milk
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon freshly ground cardamom seeds
1/2 cup chopped walnuts or pecans
1 cup confectioners' sugar
1 tablespoons lemon juice
1/2 teaspoon freshly ground cardamom seeds (see note)
Pinch of salt
1 to 2 tablespoons cream or milk
1 teaspoon butter, softened

Bake 55 to 60 minutes for a large loaf or 35 to 45 minutes for smaller loaves, or until they test done. Remove from the pan and cook on a rack.

Tips:

  • To achieve a moist and flavorful bread, ensure that the butter and eggs are at room temperature. This allows them to emulsify better and create a smooth batter.
  • Use ripe pears for a sweeter, more intense flavor. If your pears are not fully ripe, you can place them in a paper bag with a banana to help them ripen faster.
  • Be gentle when mixing the batter. Overmixing can result in a tough, dense bread. Stir just until the ingredients are combined.
  • Do not over-bake the bread. Insert a toothpick into the center of the loaf; it should come out with just a few moist crumbs attached.
  • Allow the bread to cool completely before slicing and serving. This will help the flavors to develop and the bread to set properly.

Conclusion:

Pear cardamom bread is a delicious and versatile quick bread that can be enjoyed for breakfast, lunch, or a snack. The combination of sweet pears, fragrant cardamom, and warm spices creates a truly unique and memorable flavor. With its moist, tender crumb and lightly spiced crust, this bread is sure to be a hit with everyone who tries it.

So next time you're looking for a special treat, give this pear cardamom bread a try. You won't be disappointed!
