Steps:
- To brine the chicken breasts, fill a large bowl with 1 quart of warm water and 1/4 cup kosher salt. Stir to combine until most of the salt is absorbed. Add the whole chicken breasts and let them sit in the mixture to brine for 15 minutes. Or you can also also cover the bowl and refrigerate for up to 6 hours. Remove the chicken breasts from the brine, rinse them with cold water, then pat them dry with some paper towels. (If the chicken breasts you purchased have already been pre-brined in a sodium solution, skip this brining step completely.)
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 15 minutes before using.
- Cut the chicken breasts into 1-inch pieces. Add them to a large mixing bowl and drizzle evenly with the olive oil. Toss to combine.
- In a separate small bowl, whisk together the salt, pepper, garlic powder and paprika until combined. Sprinkle the seasoning mixture evenly over the chicken. Then toss for 1 minute, or until the chicken is evenly coated with the seasoning. Thread the chicken evenly onto the skewers.
- Once the grill is hot, place the chicken kabobs evenly on the grill. Cook for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through (no longer pink on the inside).
- Transfer the kabobs to a clean plate, and loosely tent with aluminum foil. Let the chicken rest for at least 5-10 minutes.
- Then serve warm while the chicken is hot and juicy, drizzled with freshly-squeezed lemon juice if desired. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

Steps:
- If using wooden skewers, soak them in a dish of warm water for at least 20 minutes.
- Combine the chicken marinade ingredients in a zip-top bag or dish: olive oil, soy sauce, lemon juice, brown sugar, Worcestershire sauce, garlic, Italian seasoning and black pepper. Squish to mix in the bag or whisk if using a dish.
- Add the chicken pieces to the marinade. Make sure that all of the chicken is coated with the marinade. Refrigerate for at least 30 minutes and up to 4 hours.
- Place the zucchini rounds and chopped bell peppers in a baking dish or bowl. Drizzle with the 1 ½ tablespoons of olive oil and sprinkle with salt and pepper; toss gently to coat. Add the onion to the bowl last and mix in very gently so that the onion layers stay together as best as possible.
- Put the chicken and vegetables on the skewers, dividing evenly between the 8 skewers and arranging the vegetable pieces in between the chicken pieces. Aim to put about 3 chicken pieces and 2-3 pieces of each vegetable per skewer. Discard all of the used marinade that held the chicken.
- Grill over medium heat for 12-18 minutes, turning every few minutes to cook all sides evenly. Kabobs are done when chicken is cooked through to an internal temperature of 165° F.

PEANUT BUTTER CHICKEN KABOBS
This recipe is inspired by beef kabobs from West Africa commonly called suya (or seree in Sierra Leone) and consisting of spicy skewered beef pieces traditionally marinated in homemade tomato paste and ground peanuts. You can recreate a similar flavor profile at home with the peanut butter in your pantry--it's a great ingredient to play with. Using peanut butter in savory dinner recipes adds a rich, nutty taste and the fat helps keep the protein moist.

MARINATED CHICKEN KEBABS WITH A PEANUT SATAY SAUCE
I have been making this recipe for years and every time I make it I get rave reviews. It really is nothing special, I think, it is just that, the flavors all come together so well and the peanut sauce is so yummy. I make my sauce with smooth peanut butter as I am not a fan of crunchy, but I think this would be fine if you prefer to have the peanut chunks in the sauce.

Steps:
- Combine all the marinade ingredients together in a large bowl or storage container. Chop chicken into about 2cm cubed pieces, add to marinade and marinate for several hours or overnight.
- Soak skewers in water for about 30 minutes prior to using to prevent them from burning while cooking.
- Reserve marinade. Thread a piece of chicken followed by a mushroom, chicken, onion, chicken, mushroom, chicken, onion, chicken. Repeat with remaining chicken and vegetables.
- Grill or BBQ skewers turning a couple of times and basting with the reserved marinade. Until cooked about 15-20 minutes.
- I usually use red and yellow peppers as well but as I was serving these over a Thai-style salad that already had peppers in it, I chose to omit them.
- Sauce.
- I prefer to make this ahead of time and just re-heat as this allows for the flavors to really come out.
- Heat oil in a pan, add onions and garlic and cook to soften onion.
- Add remaining ingredients and stir to combine, leave on a low heat, stirring occasionally until sauce thickens. Sauce can be made a day ahead and just re-heated.
Tips:
- Choose the right chicken. Boneless, skinless chicken breasts or thighs are both good options for kabobs. If using chicken breasts, pound them to an even thickness to ensure even cooking.
- Marinate the chicken. Marinating the chicken in a flavorful mixture of spices and herbs will help to tenderize it and add flavor. Be sure to marinate the chicken for at least 30 minutes, or up to overnight.
- Use a variety of vegetables. The best kabobs have a variety of vegetables, such as bell peppers, onions, tomatoes, and mushrooms. Feel free to use your favorite vegetables or whatever you have on hand.
- Skewer the ingredients carefully. When skewering the ingredients, be sure to alternate between chicken and vegetables. This will help to ensure that the kabobs cook evenly.
- Grill the kabobs over medium heat. Grilling the kabobs over medium heat will help to prevent them from burning. Cook the kabobs for about 10 minutes per side, or until the chicken is cooked through.
- Serve the kabobs with your favorite dipping sauce. Peanut sauce is a classic dipping sauce for chicken kabobs, but you can also use tzatziki sauce, ranch dressing, or your favorite barbecue sauce.
Conclusion:
Peanutty Chicken Kabobs are a delicious and easy-to-make meal that is perfect for summer grilling. The chicken is marinated in a flavorful peanut sauce and then grilled to perfection. The kabobs are served with a creamy peanut sauce that is sure to please everyone at your table. So next time you're looking for a quick and easy meal, give Peanutty Chicken Kabobs a try!
