4 cups quick-cooking oats
1 cup packed brown sugar
2/3 cup butter, melted
1/2 cup plus 2/3 cup peanut butter, divided
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 package (11 ounces) butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped salted peanuts

Steps:

  • In a large bowl, combine the oats, brown sugar, butter, 1/2 cup peanut butter, corn syrup and vanilla. Press into a greased 13x9-in. baking pan. Bake at 375° for 12-14 minutes or until mixture is bubbly around the edges., In a microwave-safe bowl, melt butterscotch and chocolate chips; stir until smooth. Stir in peanuts and remaining peanut butter; spread over the oat mixture. Cool for 10 minutes; chill until set.

MOUND'S
MIX 1ST 3 ITEMS TOGETHER, MIX WELL
1 lb bag sweetened coconut
1 lb- box powdered sugar
1 can(s) (Eagle brand) 14 oz size sweetened condensed milk, (do not use evaporated milk)
3 C almonds
DIPPING CHOCOLATE:
1 bag chocolate chips or chocolate almond bark
IF CHOC/BARK IS TOO THICK TO DIP CANDY
see note below: parrafin wax as needed, approx. 1/2 block wax to 1 1/2 lb chocolate (add to chocolate little at a time in small chunks ) this keeps your chocolate thin when dipping

Steps:

  • 1. Mix powder sugar and Sweetened CONDENSED MILK together. (DO NOT USE EVAPORATED MILK) Blend well. Next add coconut, stirring till well blended. (Mixture will be thick.)
  • 2. With buttered hands, form into logs to cut into 1/1/2" long pieces or roll into balls to shape for Mounds. Candy MUST CHILL until chocolate is melted and ready to dip chocolates. (Chilling candy makes for easier dipping.) Optional: see Almond Joy below; top with almond on each.
  • 3. Melt chocolate chips or almond bark, on med-low heat in double boiler. Make sure this choc is THIN, to coat the candy. NOTE: If chocolate or bark gets too thick to dip candy, add a little paraffin wax to the chocolate to thin to needed consistency. Use only a little at a time. Melt into chocolate (approx 1 TBS) you can always add more as needed.
  • 4. Dip each chilled Mound candy into chocolate with toothpick or small slotted spoon. Place on parchment or wax paper lined baking sheet to set... chill til set and remove from refrigerator.
  • 5. FOR ALMOND JOY; Press one or two almonds slightly into top of the mounds, before dipping into chocolate.
  • 6. Tip: Use buttered hands to roll your candy or Mounds, this makes it so much easier. Store in covered tin in refrigerator. Remove from refrigerator 1/2 before serving candies.

4 ½ cups confectioners' sugar
2 cups graham cracker crumbs
½ cup margarine
2 cups semisweet chocolate chips

  • Grease a 10x15 inch pan. In a large bowl, combine 1 1/2 cups melted margarine, peanut butter, confectioners' sugar and graham cracker crumbs. Spread in prepared pan.

1 cup whole salted peanuts
1 bag (8 oz) milk chocolate drops

Steps:

2 1/4 cups coarsely chopped roasted salted peanuts
50 store-bought soft caramel squares, unwrapped (14 ounces)
1 cup mini marshmallows

Steps:

  • Lightly coat an 8-inch square baking dish with cooking spray. Line with parchment paper, leaving a 1-inch overhang on all sides, then lightly coat parchment with spray. Cover paper with 1 1/4 cups peanuts.

Who doesn't enjoy Peanut butter, Chocolate and peanuts?? These are so easy using your own favorite Peanut butter cookie recipe. I have listed (3) variations of this recipe. One with just the Chocolate topping. One with Drizzled Glaze, and One with Caramel then the Chocolate topping. Photo coming . . Sorry

1 favorite peanutbutter cookie recipe ( your own)
1 Cup chocolate chips
1 Cup butterscotch chips
2 Cups chopped peanuts

Steps:

  • 1. Heat Oven @ 350. Spray with non stick cooking spray a 13 X 9 Pan
  • 2. Mix your favorite Recipe for Peanut-Butter cookies. Press dough into 13X9 Pan. Sprinkle with 1 cup of the peanuts and press into the cookie dough. (Save the other cup of nuts til later) Bake 15-18 min, til edges are golden brown. COOL approx 10 min.
  • 3. in a small Microwave safe bowl, add chips, heat to just melted. Spread evenly over the bars. Sprinkle with the remaining Cup of Chopped Peanuts. Chill in refer for 20-30 min, until set.
  • 4. For Bars cut into 9 rows By 4 rows. For Added attraction on your cookie tray, Tip: # 1. Drizzle with a white glaze of this mixed pdr sugar Vanilla and milk mixed thin, and poured into a zip lock bag, Cut a tiny hole off the corner and drizzle or pipe over your Bars. Enjoy.
  • 5. Variation Tip # 2 after baking the Bars, Melt Caramels, then pour this over the Bars, Chill til Caramel sets. Melt the Chocolate above, then spread over the Caramel, Sprinkle the 1 cup of Peanuts over the Chocolate. Chill again til set. Cut into Bars.

  • Make sure to use unsweetened shredded coconut for the filling, as sweetened coconut will make the bars too sweet.
  • If you don't have peanut butter chips, you can use chopped peanuts instead.
