Categories     Other Desserts

Time 1h25m

Number Of Ingredients 6

1 c creamy peanut butter
3/4 c caramel flavored ice cream topping
3 Tbsp packed brown sugar
3 c apple-cinnamon flavor round toasted oat cereal (apple jacks)
1 c coarsely chopped dried apples
1/2 c salted peanuts, coarsely chopped

Steps:

  • 1. Line an 8x8x2-inch baking pan with foil, extending foil up over edges of pan. Butter or spray the foil. In a large saucepan combine 3/4 cup of the peanut butter, 1/2 cup of the ice cream topping, and the brown sugar. Cook and stir over medium beat just until mixture starts to bubble.
  • 2. Remove from heat. Add cereal and apples; stir gently to coat. Transfer to prepared pan; press firmly into pan.
  • 3. In a small bowl, stir together remaining 1/4 cup peanut butter and 1/4 cup ice cream topping. Spread evenly over bars and sprinkle with peanuts, pressing lightly.
  • 4. Let bars stand 1 hour to set. Use foil to lift from pan. Cut into bars.

Tips:

  • Chilling the cookie dough before baking helps to prevent the cookies from spreading too much and keeps them chewy.
  • Use a cookie scoop to ensure that all of the cookies are the same size and shape, which will help them bake evenly.
  • Bake the cookies until the edges are just beginning to brown and the centers are still slightly soft. This will help to prevent them from becoming dry and crumbly.
  • Let the cookies cool completely on a wire rack before storing them in an airtight container.
  • Enjoy the cookies within a week of baking them.

Conclusion:

Peanutty apple cookies are a delicious and easy-to-make treat that is perfect for any occasion.
