PEANUT PATTIES
Peanut patties are like peanut brittle's Southern cousin. This recipe is from one of our favorite cookbooks, Texas Home Cooking, by Cheryl Alters Jamison and Bill Jamison.

Steps:
- Preparation: Lay a large piece of waxed paper on a dishtowel on a counter. In a heavy saucepan, combine the sugar, peanuts, corn syrup and water. Stirring constantly over medium heat, cook the mixture to the high end of the soft ball stage, 235°F. Remove the pan from the heat, and stir in the remaining ingredients, adding enough food coloring to get a vibrant red shade. Stir the mixture frequently for approximately 20 minutes, or until it cools to about 125°F. The mixture will become very thick and creamy opaque, and the peanuts will be suspended. Immediately spoon out the mixture in patties, the larger the better. Let the patties sit for at least 1 hour before eating them. Their texture should be chewy like nougat rather than creamy like praline. Wrap them individually for storage. They'll keep a week.
RED PEANUT PATTIES
This is one of my husbands favorite candies. For years we bought them whenever we could find them. One night we happened to mention how much Bobby enjoyed them, but that they were not always available. My friend Linda said she had a recipe that she thought sounded a lot like the one we were talking about. This is her recipe. They...

Steps:
- 1. Place the first four items in a heavy saucepan. Stir to combine.
- 2. Bring to a boil and continue cooking on a low boil, uncovered, for approx one hour until soft ball stage (235-240*), stirring occasionally.
- 3. While cooking, prepare a spot on your counter top with waxed paper to drop candy on.
- 4. At soft ball stage, remove from heat and add margarine/butter stirring until melted.
- 5. Add powdered sugar, sifting if needed, and red coloring. (I use extra for more color)
- 6. Stir to combine well. Keep stirring until it just starts to thicken.
- 7. Quickly drop by spoonfulls onto waxed paper. The nuts should be flat, not in a pile. If candy starts to get too thick, just place pan back on heat to warm slightly.
- 8. Depending on your preference, they can be any size you like. I prefer to eat several that are 2" across. Bobby likes bigger ones. Your choice will always be right.
- 9. ENJOY

PEANUT PATTIES BY MICROWAVE
There was a candy co., "Tom's," in the South that made these wonderful pink peanut patties. This recipe tastes just as yummy! It's the raw peanuts --they're not cooked to roasted stage. I adapted the recipe from stove-top directions back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. See the companion recipe for Pecan Pralines. Both are great for gifts!

Tips:
- Use high-quality chocolate: The quality of the chocolate you use will greatly impact the taste of your peanut patties. Look for a chocolate that is at least 60% cacao and has a smooth, rich flavor.
- Chill the mixture before forming the patties: This will help the mixture to set and make it easier to work with. You can chill the mixture for at least 30 minutes or up to overnight.
- Use a cookie scoop to form the patties: This will help to ensure that the patties are all the same size and shape. If you don't have a cookie scoop, you can use a tablespoon.
- Roll the patties in chopped peanuts: This will give the patties a delicious, crunchy coating. You can use any type of peanuts you like, such as roasted, salted, or unsalted.
- Store the patties in the refrigerator: The peanut patties can be stored in the refrigerator for up to 2 weeks. You can also freeze the patties for up to 3 months.
