RED PEANUT PATTIES

This is one of my husbands favorite candies. For years we bought them whenever we could find them. One night we happened to mention how much Bobby enjoyed them, but that they were not always available. My friend Linda said she had a recipe that she thought sounded a lot like the one we were talking about. This is her recipe. They...

Time 1h

Number Of Ingredients 7

2 1/2 c sugar
2/3 c light karo
1 c milk
2 1/2 c raw peanuts (16 oz. bag)
4 Tbsp butter or margarine
1 c powdered sugar
4 OR 5 drops red food coloring

Steps:

  • 1. Place the first four items in a heavy saucepan. Stir to combine.
  • 2. Bring to a boil and continue cooking on a low boil, uncovered, for approx one hour until soft ball stage (235-240*), stirring occasionally.
  • 3. While cooking, prepare a spot on your counter top with waxed paper to drop candy on.
  • 4. At soft ball stage, remove from heat and add margarine/butter stirring until melted.
  • 5. Add powdered sugar, sifting if needed, and red coloring. (I use extra for more color)
  • 6. Stir to combine well. Keep stirring until it just starts to thicken.
  • 7. Quickly drop by spoonfulls onto waxed paper. The nuts should be flat, not in a pile. If candy starts to get too thick, just place pan back on heat to warm slightly.
  • 8. Depending on your preference, they can be any size you like. I prefer to eat several that are 2" across. Bobby likes bigger ones. Your choice will always be right.
  • 9. ENJOY

PEANUT PATTIES

Peanut patties are like peanut brittle's Southern cousin. This recipe is from one of our favorite cookbooks, Texas Home Cooking, by Cheryl Alters Jamison and Bill Jamison.

Time 3h

Yield 6

Number Of Ingredients 8

3 cups sugar
3 cups raw peanuts
1 cup light corn syrup
1/2 cup water
1/2 cup (1 stick) butter
1 tablespoon vanilla extract
1/2 teaspoon salt
A few drops of red food coloring

Steps:

  • Preparation: Lay a large piece of waxed paper on a dishtowel on a counter. In a heavy saucepan, combine the sugar, peanuts, corn syrup and water. Stirring constantly over medium heat, cook the mixture to the high end of the soft ball stage, 235°F. Remove the pan from the heat, and stir in the remaining ingredients, adding enough food coloring to get a vibrant red shade. Stir the mixture frequently for approximately 20 minutes, or until it cools to about 125°F. The mixture will become very thick and creamy opaque, and the peanuts will be suspended. Immediately spoon out the mixture in patties, the larger the better. Let the patties sit for at least 1 hour before eating them. Their texture should be chewy like nougat rather than creamy like praline. Wrap them individually for storage. They'll keep a week.

Tips:

  • To make the peanut butter filling extra smooth, use a high-quality peanut butter and cream it with the butter until it is light and fluffy.
  • If the peanut butter mixture is too thick to handle, add a little more cream or milk until it reaches a spreadable consistency.
  • To make the chocolate coating smooth and shiny, use a good quality chocolate and temper it before dipping the peanut butter balls.
  • If you don't have a candy thermometer, you can test the chocolate to see if it is tempered by dipping a small amount into a glass of cold water. If the chocolate hardens immediately and snaps when you break it, it is tempered.
  • To make the peanut patties easier to dip, chill them in the freezer for 30 minutes before dipping them in the chocolate.
  • If you are having trouble getting the chocolate to stick to the peanut butter balls, try using a fork to dip them instead of your fingers.
  • Store the peanut patties in an airtight container in the refrigerator for up to 2 weeks.

Conclusion:

Peanut patties are a classic candy that is easy to make and always a hit. With just a few simple ingredients, you can make a batch of delicious peanut patties that are perfect for any occasion. Whether you are looking for a sweet treat to enjoy at home or a gift to give to friends and family, peanut patties are sure to please everyone.
