Time 30m

Yield 4

Number Of Ingredients 19

¼ cup creamy peanut butter
2 tablespoons unseasoned rice vinegar
2 tablespoons fresh lime juice, from one lime
3 tablespoons vegetable oil
1 tablespoon soy sauce (use gluten-free if needed)
2 tablespoons honey
2½ tablespoons sugar
2 garlic cloves, roughly chopped
1-inch square piece fresh ginger, peeled and roughly chopped
1 teaspoon salt
¼ teaspoon crushed red pepper flakes
2 tablespoons fresh cilantro leaves
4 cups chopped Napa cabbage or shredded coleslaw mix (I like to toss in a little shredded red cabbage for color)
1 cup prepared shredded carrots
1 red bell pepper, thinly sliced into bite-sized pieces
1 small English cucumber, halved lengthwise, seeded and thinly sliced
1 cup cooked and shelled edamame
2 medium scallions, thinly sliced
½ cup loosely packed chopped fresh cilantro

Steps:

  • For the dressing, combine all of the ingredients except for the cilantro in a blender and process until completely smooth. Add the cilantro and blend for a few seconds until the cilantro is finely chopped. Refrigerate until ready to serve.
  • For the salad, combine all of the ingredients in a large bowl and toss to combine. If serving right away, drizzle the peanut dressing over top and toss; otherwise, serve the dressing on the side so the salad doesn't get soggy.

Provided by echo echo

Categories     Vegetable

Time 10m

Yield 2 1/2 cups

Number Of Ingredients 9

3 tablespoons sugar
3/4 teaspoon salt
1 teaspoon mustard powder
2 teaspoons flour
1/3 cup butter
1 1/2 cups sour cream
2 eggs, beaten
1/3 cup wine vinegar
1/3 teaspoon crumbled dried tarragon or 1 teaspoon snipped fresh tarragon

Steps:

  • Combine all ingredients in saucepan.
  • Cook over medium heat, stirring constantly, until smooth and thickened.
  • Chill.

Tips:

  • For a creamy and smooth dip, use full-fat sour cream and mayonnaise. If you prefer a lighter version, you can use low-fat or non-fat dairy products.
  • Adjust the amount of lime juice and cilantro to your taste. If you like a more tangy dip, add more lime juice. If you want a stronger cilantro flavor, add more cilantro.
  • If you don't have any roasted peanuts on hand, you can toast them yourself in a single layer in a preheated 350°F oven for 10-12 minutes, stirring once or twice during baking. You can also use a toaster oven or air fryer to toast the peanuts.
  • This dip is best served fresh, but it can be made ahead of time and stored in the refrigerator for up to 3 days. When you're ready to serve, let the dip come to room temperature for about 30 minutes before serving.
  • Serve this dip with tortilla chips, vegetable crudités, or crackers. It's also a great addition to a taco or fajita night.

Conclusion:

This peanut-cilantro dip is an easy and delicious appetizer or snack that's perfect for any occasion. It's creamy, tangy, and flavorful, with a hint of spice from the jalapeño. Plus, it's made with healthy ingredients like peanuts, cilantro, and lime juice. So next time you're looking for a quick and easy party dip, give this recipe a try. You won't be disappointed!
