I am a substitute teacher and found this fudge recipe in a very old book in our school library. It was written before microwaves, so I modified it to make a quick treat. The faculty and staff gave it rave reviews. -Peggy Key, Grant, Alabama

Tips:
- Use a heavy-bottomed saucepan to prevent scorching.
- Stir constantly to prevent the mixture from sticking to the bottom of the pan.
- Use a candy thermometer to ensure that the mixture reaches the correct temperature.
- If you don't have a candy thermometer, you can use the cold water test. Drop a small amount of the mixture into a bowl of cold water. If it forms a soft ball, the mixture is ready.
- Be careful not to overcook the mixture, as this will make the fudge grainy.
- Add the nuts and chocolate chips immediately after removing the mixture from the heat. This will help to prevent them from sinking to the bottom of the pan.
- Pour the mixture into a greased 8x8 inch pan and let it cool completely before cutting into squares.
- Store the fudge in an airtight container at room temperature for up to 2 weeks.
Conclusion:
Peanut choc scotch fudge is an easy and delicious treat that can be made with just a few simple ingredients. It's perfect for any occasion, and it's sure to be a hit with everyone who tries it.
