Mom learned to make these candies from her best friend, Lela. We had to have them every Christmas once we had tasted them.

Provided by Kathie Carr

Categories     Candies

Time 15m

Number Of Ingredients 5

2 c peanut butter
1 pkg (12 ounces) semi sweet chocolate chips
1 pkg (11-12 ounces) butterscotch chips
1 tsp vegetable oil
3 c canned shoestring potatoes

Steps:

  • 1. In a medium sauce pan at medium heat, combine peanut butter, chocolate chips, and butterscotch chops. Stir constantly until all are melted and combined well. Stir in oil. Remove from heat and stir in shoestring potatoes.
  • 2. Drop candy by teaspoons full onto waxed paper or parchment paper covered cookie sheets. Refrigerate for about 2 hours or until set.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • Don't overcook the peanut butter mixture, or it will become too hard and brittle.
  • If you don't have a candy thermometer, you can test the temperature of the peanut butter mixture by dropping a small amount into a bowl of cold water. If it forms a soft ball, it's ready.
  • Be careful when working with hot sugar syrup. It can cause serious burns.
  • If you're having trouble getting the sugar syrup to the right temperature, you can add a little bit of corn syrup. This will help to prevent the sugar from crystallizing.
  • Work quickly when dipping the shoestring potatoes into the sugar syrup. The syrup will harden quickly, so you don't want to take too long.
  • Store the peanut butter shoestring haystacks in an airtight container at room temperature for up to 2 weeks.

Conclusion:

Peanut butter shoestring haystacks are a delicious and easy-to-make treat that is perfect for any occasion. They're made with just a few simple ingredients, and they can be customized to your liking. Whether you like them plain or with a variety of toppings, peanut butter shoestring haystacks are sure to be a hit.
