- Beat peanut butter and butter together in the bowl of an electric stand mixer fitted with a paddle attachment on medium speed until smooth. Add confectioners' sugar and beat until smooth. Add vanilla extract and kosher salt and beat until combined. Add rice cereal and mix on low to combine; mixture will be quite thick.
- Roll the mixture into 1 1/2-inch balls and place on one of the prepared sheets. Place in the freezer briefly while you make the chocolate coating.
- Melt chocolate chips and shortening in a microwave-safe bowl in a microwave on high power in 20-second bursts, mixing after each.
- Dip the cereal balls in the melted chocolate and place on the clean parchment-lined pan. You can use two forks to help you cover the balls in chocolate and move them to the prepared pan. Sprinkle with sea salt.
- Let them set up, about 40 minutes.

- Butter a 9x13-inch pan.
- In a large saucepan, mix the sugar& Karo syrup.
- Cook over medium heat until mixture starts to boil.
- Remove pan from heat and stir in peanut butter.
- Add the Rice Krispies and mix until covered.
- Put into the buttered pan and lightly press.
- In a microwave-safe bowl, cook both kinds of chips until melted.
- Pour on top of Krispies squares and spread to cover.

- Cream peanut butter and powdered sugar in bowl of an electric mixer. Add rice cereal and mix until incorporated. (I find that using a whisk attachment, as opposed to the paddle attachment, crushes up the cereal a bit more effectively and results in a better texture.).
- Using a meatballer or a spoon, scoop out bits of the mixture and roll into 3/4" balls. Cover either two dinner plates or a cookie sheet in parchment and space the balls about 1" apart. Place in freezer for 15 minute to harden.
- Melt chocolate in a double-boiler over the stove or on 50% power in your microwave for about 2 minutes, stopping to stir once. Remove peanut butter balls from freezer. Poke one with a toothpick and swirl about 3/4 of the way up the sides in the chocolate mixture. Return it to the parchment and repeat the process for the remaining candies.
- Return tray of completed buckeyes to the freezer for 20 minutes, or until chocolate has hardened. Keep in freezer or refrigerator until serving. If frozen, allow to thaw 5 minutes before serving.

- 1. Mix powdered sugar, butter, peanut butter, & rice krispies, in a large bowl. Blend thoroughly with hands until dough forms. Roll into small balls ( approximately 1/4 inch in diameter.)
- 2. Next place each ball onto waxed paper on the cookie sheet, & place in the freezer to harden
- 3. Place chocolate almond bark in a microwave safe bowl & melt it a little at a time & stir in between until completely melted. Be sure not to let it burn.
- 4. Remove peanut butter balls from freezer & dip them into the almond bark letting the excess drip off then place them back on the waxed paper to let harden. After they have hardened place them in an airtight container. Serve & enjoy. Recipe taken from : cooks.com called buckeyes I just replaced the chocolate chips & paraffin wax with the almond bark - this makes it so much easier. And instead I completely dipped them instead of leaving part of them undipped.
Tips:
