PEANUT BUTTER PIES
I absolutely love peanut butter and peanut butter pie is one of my favorites. But I'm a Registered Dietitian, so I knew just how high my original recipe was in fat and calories. I cut down on several critical things, and the resulting pie is great! -Lisa Varner, Charleston, South Carolina

Steps:
- Lesson Plan
- Preheat the oven to 350°F.
- In a bowl, stir together the graham cracker crumbs and melted butter; press into the bottom and sides of a 9-inch pie dish. Bake until brown, about 5 minutes. Set aside to cool completely.
- With a heavy-duty stand mixer fitted with the whisk attachment, whisk the cream at high speed until it forms stiff peaks. Transfer to a large clean bowl and set aside.
- Fit the stand mixer with the paddle attachment and a clean bowl; add the cream cheese, peanut butter, brown sugar, and vanilla and beat at high speed until the mixture is smooth and silky.
- Gently fold the cream cheese-peanut butter mixture into the whipped cream with a spatula until completely blended. Spoon into the cooled pie shell and smooth out the top. Place the pie in the freezer for 1 hour or until ready to serve (if you are going to leave it in the freezer awhile, wrap it in plastic wrap after 1 hour so it doesn't get freezer burn).
- Take the pie out of the freezer 15 minutes before serving. Slice it and pig out!
Tips:
- Use quality ingredients: Fresh, high-quality ingredients will produce the best results. Use a good quality peanut butter, cream cheese, and butter.
- Make sure the cream cheese and butter are at room temperature: This will help them blend together smoothly and create a creamy filling.
- Don't overmix the filling: Overmixing can make the filling dense and tough. Mix just until the ingredients are combined.
- Chill the pie before serving: This will help the filling set and make it easier to slice.
- Garnish with whipped cream or chopped peanuts: This will add a touch of sweetness and crunch to the pie.
Conclusion:
Peanut butter pie is a classic dessert that is loved by people of all ages. It is easy to make, and with a few simple tips, you can create a pie that is both delicious and beautiful. Whether you are making it for a special occasion or just because you have a craving for something sweet, peanut butter pie is sure to be a hit.
