PEANUT BUTTER NO BAKE COOKIES
Posted in response to a request, I got this recipe from a lady at church who make them for Bible School in the 1980s. I had made chocolate no-bake cookies for YEARS but had never heard of peanut butter no bake cookies. So delicious that my choco-holic daughter likes them better than the chocolate variety! No. of servings depends on how big you make the cookies. Prep time depends on how fast you are scooping the cookies onto the wax paper covered newspaper! (You get better w/ practice! :D )

PEANUT BUTTER NO-BAKE ENERGY COOKIES
This is a chocolatey peanut butter cookie with a hint of banana. I like to use flavored peanut butter to give it some flare. I have used chocolate-peanut butter. You can also use a cinnamon raisin peanut butter or a white chocoalate-macademia PB. They are made by Peanut Butter & Company, and it can be found in the PB aisle at most grocery stores. Usually on the top shelf.

NO-BAKE PEANUT BUTTER COOKIES III
These cookies were always served for school lunch. I got the recipe after marrying from one of the cooks, and have made it many times since. This cookie generally is seen with cocoa, but I like this one better, it doesn't have any.

Tips:
- Use creamy peanut butter. Creamy peanut butter will give a smoother texture to your cookies. If you only have chunky peanut butter, you can use a food processor to grind it until it's smooth.
- Chill the dough before scooping. This will help the cookies set up more quickly and prevent them from spreading too much in the oven.
- Use a small cookie scoop. This will help you get uniform-sized cookies that will bake evenly.
- Don't over-bake the cookies. They should be slightly soft in the center when you take them out of the oven. They will continue to set as they cool.
- Store the cookies in an airtight container at room temperature for up to 3 days. You can also freeze the cookies for up to 2 months.
Conclusion:
These peanut butter no-bake energy cookies are a delicious and healthy snack that are perfect for on-the-go. They're made with just a few simple ingredients and can be whipped up in no time. So next time you're looking for a quick and easy snack, give these cookies a try!
