- 1. FOR THE BREAD: In a large mixing bowl stir together flour, sugars, baking powder, salt, and cinnamon. In another bowl, combine mashed bananas, milk, peanut butter, oil, vanilla, and egg. Add to flour mixture, stirring just till combined. Stir in chocolate pieces.
- 2. Pour batter into two greased 8x4x2-inch loaf pans. Bake in a preheated 350-degree oven for 50 to 55 minutes or till wooden toothpick inserted near the center comes out clean. Cool in pans for 10 minutes.
- 3. Remove from pans; cool thoroughly on a wire rack. Wrap and store overnight before serving. To serve, frost with Peanut Butter Frosting. If desired, top with crushed peanuts and miniature semisweet chocolate pieces. Slice to serve.
- 4. FOR THE FROSTING: In a small saucepan melt 3 Tbsp. chunky peanut butter and 2 Tbsp. butter. Remove from heat; stir in 1 cup powdered sugar and 1 tsp. vanilla. Stir in 1 Tbsp. milk. Add more milk, if necessary, till of spreading consistency. Makes about 1/2 cup.

- For the bread: Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
- Whisk together the flour, baking soda, cinnamon and salt in a medium bowl.
- Beat together the peanut butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth. Beat in the egg and vanilla, then fold in the mashed banana. Add the flour mixture, and beat on medium-low until just combined (it's OK if there are some lumps).

Let the glaze sit until it has stiffened up a bit but is still spreadable. Spread over the top of the bread, and sprinkle the peanuts on top. Let sit for 10 minutes to set up before slicing. The bread can be stored at room temperature in an airtight container for up to 3 days.

I can't seem to get enough banana bread recipes, and the addition of peanut butter is always a plus. I love the light, cakelike texture of this bread. I may increase the peanut butter next time - it's pretty subtle, although it does comes through more strongly as the bread sits (it would probably be good to make it the night before you want to eat it).
