This is a little different than the melt away cake already posted. This one has 1/2 cup more butter in the cake and a chocolate icing. I made it in a Williams Sonoma Lady Ann cake pan. It is 1 layer pan with an indention for the peanut butter. It looks very professional and appealing.

Time 1h25m

Number Of Ingredients 20

CAKE
3 c all-purpose flour
2 eggs
2 c sugar
1/2 c cocoa
2 tsp baking soda
1 tsp salt
1/2 c vegetable oil
2 tsp vinegar
2 tsp vanilla
2 c water
PEANUT BUTTER MIDDLE
3/4 tsp vegetable oil
1 c peanut butter (you can use more if you want)
TOPPING
1/2 c butter
1/4 c cocoa
1 lb powdered sugar
6 Tbsp sour milk (you can sour the milk by adding 1/2 tsp of vinegar to the milk)
1 tsp vanilla

Steps:

  • 1. Combine the cake ingredients and mix until smooth.
  • 2. Pour cake batter into a 9x13 pan prepared with baking spray. Bake in a 350 degree oven for 35-40 minutes, or until a toothpick is inserted and comes out clean.
  • 3. Cool completely.
  • 4. Mix together peanut butter and 3/4 tsp of cooking oil.
  • 5. Spread this mixture on top of the cooled cake. Refrigerate for 20 minutes.
  • 6. Heat in a saucepan 1/4 cup of cocoa, powdered sugar, sour milk, butter, and vanilla (you can sour the milk with vinegar, add about half a tsp of vinegar to the milk and it should thicken you may need a dab more). Mix this until smooth and comes to a boil.
  • 7. Let cool for a few minutes... Pour and spread over the peanut butter layer.
  • 8. Cool and keep refrigerated.

Tips:

  • To achieve the perfect texture for your meltaway cake, make sure to cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, resulting in a tender and airy cake.
  • Don't overmix the batter once you've added the flour. Overmixing can develop the gluten in the flour, resulting in a tough cake.
  • Use high-quality peanut butter for the best flavor. Look for a peanut butter that is made with 100% peanuts and no added sugar or oils.
  • For a richer flavor, use dark chocolate chips instead of semi-sweet chocolate chips.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • To make the meltaway cake ahead of time, bake it according to the recipe instructions and then let it cool completely. Wrap it in plastic wrap and store it in the refrigerator for up to 3 days, or freeze it for up to 2 months.

Conclusion:

The peanut butter meltaway cake is an easy-to-make, delicious cake that is perfect for any occasion. With its moist and tender crumb, rich peanut butter flavor, and chocolate chips, it's sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this peanut butter meltaway cake a try. You won't be disappointed!
