DOUGH:
1/2 c butter or butter flavored crisco( i use the real butter)
1/2 c jif extra crunchy peanut butter
1/2 c granulated sugar
1/2 c brown sugar, firmly packed
1 large egg, well beaten
1/2 tsp vanilla extract
1 1/3 c all purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
granulated sugar to roll cookie balls in.
CRINKLE FROSTING:
1/2 c extra crunchy peanut butter
2/3 c powdered sugar
1/4 c milk or water more or less

Steps:

  • 1. Dough: Combine the first 4 ingredients in a bowl and beat with an electric mixer; beat at medium speed untill well blended. Beat in egg and vanilla. Combine remaining ingredients in a small bowl. Add gradually to butter mixture at low speed. Beat until well blended. Cover. Refrigerate 1 hour.
  • 2. Heat oven to 350^. Spray baking sheet lightly with cooking spray. Remove dough from refrigerator; shape into 1 1/4 inch balls. Roll in granulated sugar. Place 2 inches apart on baking sheets.
  • 3. Flatten each cookie with bottom of a glass dipped in granulated sugar. Bake 12 to 15 minutes or until light brown and just set- Cool 2 minutes on baking sheet. Place on cooling racks to cool completely. Brush with frosting if desired, when cooled.
  • 4. Crinkle Topping: Combine ingredients in a small bowl, stirring with fork until well blended. Mixture will clump together and appear moist; stir in milk to thin to spreading consistency and brush on cooled cookies if desired.

Tips:

  • For the best results, use smooth peanut butter. Using crunchy peanut butter will result in a cookie with a less smooth texture.
  • Don't overmix the dough. Overmixing will result in a tough cookie. Mix just until the ingredients are combined.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Be careful not to overbake the cookies. Overbaked cookies will be dry and crumbly. Bake the cookies just until they are set around the edges and the centers are still slightly soft.
  • Allow the cookies to cool completely on a wire rack before serving. This will help them to set and firm up.

Conclusion:

Peanut butter crinkles are a classic holiday cookie that is sure to please everyone. They are easy to make and always a hit with kids and adults alike. With their chewy texture, peanut butter flavor, and powdered sugar coating, these cookies are sure to be a favorite in your holiday baking repertoire.
