Time 1h

Number Of Ingredients 5

1 cup smooth peanut butter ((no added sugar))
1 large egg
2/3 cup erythritol
1/2 teaspoon baking soda
1/2 teaspoon vanilla essence

Steps:

  • Preheat oven to 350F (180°C) and line a cookie tray with baking paper. Set aside.

  • Roll about 2 tbsp of dough between your palms to form a ball, then place on the prepared cookie tray. Repeat until all dough has been used. You should end up with 12-14 cookies.
  • Use a fork to flatten the cookies, creating a criss-cross pattern across the top.
  • Bake the cookies for 12-15 minutes.
  • Remove from the oven and allow to cool for 25 minutes on the baking tray, then transfer to a cooling rack for another 15 minutes.

PEANUT BUTTER COOKIES (DIABETIC FRIENDLY)

PEANUT BUTTER COOKIES (DIABETIC FRIENDLY) image

This recipe comes from a cookbook called: "America's Best Cookbook for Kids With Diabetes". (I figured it is a pretty good cookbook for anyone with diabetes though)...It was written in 2005 by C Bartley. A friend gave me the book and the recipes that I have tried are awesome. I think this one would be a great "Gift In a Jar"...

Time 29m

Yield 48 cookies, 24 serving(s)

Number Of Ingredients 9

1/4 cup margarine, softened
1 cup creamy style peanut butter
1/4 cup egg substitute
2 tablespoons honey
1/2 teaspoon vanilla extract
1 cup Splenda sugar substitute (or any powdered sugar substitute that is the equivalent of 1 cup of sugar)
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350° F.
  • In a large bowl, beat margarine and peanut butter with an electric mixer until creamy, approximately 1 minute.
  • Add egg substitute, honey and vanilla.
  • Beat on high speed for approximately 1½ minutes.
  • Add Splenda and beat on medium speed until well blended, approximately 30 seconds.
  • In small bowl, combine flour, baking soda and salt.
  • Slowly add flour mixture to peanut butter mixture, beating on low speed until well blended, about 1½ minutes (mixture may be crumbly).
  • Roll level teaspoons of dough into balls and drop onto a lined sheet pan, about 2" apart.
  • Flatten each ball with a fork, pressing a crisscross pattern into each cookie.
  • Bake 7-9 minutes or until light brown around the edges.
  • Cool on wire rack.

Tips:

  • Choose the right peanut butter: Use a natural, unsweetened peanut butter without added sugars or oils.
  • Use a sugar substitute: For a diabetic-friendly version, replace the granulated sugar with a sugar substitute like erythritol, xylitol, or stevia.
  • Use whole wheat flour: Whole wheat flour provides more fiber and nutrients than all-purpose flour.
  • Add some moisture: If the dough seems too dry, add a little milk or water until it comes together.
  • Chill the dough: Chilling the dough for at least 30 minutes before baking helps the cookies hold their shape.
  • Don't overbake the cookies: Bake the cookies until they are just set around the edges but still soft in the center.

Conclusion:

These diabetic-friendly peanut butter cookies are a delicious and satisfying treat that can be enjoyed by people with diabetes. Made with natural, unsweetened peanut butter, a sugar substitute, and whole wheat flour, these cookies are lower in sugar and carbohydrates than traditional peanut butter cookies. They are also a good source of fiber and healthy fats. So, next time you are craving a sweet snack, reach for one of these diabetic-friendly peanut butter cookies.
