Time 25m

Yield 2-4 serving(s)

Number Of Ingredients 11

1 1/3 cups flour
1 tablespoon sugar
1/4 teaspoon cinnamon
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
4 tablespoons melted butter
1/2 teaspoon vanilla
1/3 cup chocolate chips (morsels)
1/2 cup peanut butter chips

Steps:

  • Preheat griddle.
  • Combine flour, sugar, cinnamon, baking powder and salt in a large bowl.
  • Mix together liquid ingredients and whisk into dry mixture until smooth.
  • Fold in the peanut butter& chocolate chips.
  • Pour 1/4 cup batter for each pancake onto hot greased griddle.
  • Cook until the bubbles that form on top begin to pop, before flipping, then cook a minute or so more.
  • Serve immediately topped with whipped butter& syrup.

Tips:

  • Use fresh baking powder and baking soda: Old baking powder and baking soda can lose their potency, resulting in flat pancakes.
  • Don't overmix the batter: Overmixing the batter can develop the gluten in the flour, resulting in tough pancakes. Mix just until the ingredients are combined.
  • Let the batter rest: Letting the batter rest for a few minutes before cooking allows the flour to absorb the liquid and develop flavor.
  • Cook the pancakes over medium heat: Cooking the pancakes over too high heat can burn the outside before the inside is cooked through. Medium heat allows the pancakes to cook evenly.
  • Flip the pancakes only once: Flipping the pancakes too often can break them up. Flip them only once, when the edges are dry and bubbles are forming on the surface.
  • Serve the pancakes immediately: Pancakes are best served immediately, while they are still warm and fluffy.

Conclusion:

These peanut butter chip chocolate chip pancakes are a delicious and easy breakfast treat that the whole family will love.
