- 1. dressing: 1/3 cup chopped cashews 1 cup mandarin oranges, drained
- 2. 1. In a small glass bowl, whisk together peanut butter, soy sauce, honey, olive oil, garlic powder, ginger, and cayenne pepper. Microwave on High 1 minute. 2. Place chicken in baking dish and pour peanut butter sauce over. Bake at 350 degrees (175C) oven. 3. In a large bowl, place lettuce, red pepper, onions, add chicken and toss to mix well.
