Steps:
- Mix peanut butter, margarine or butter, powdered sugar, and vanilla in bowl (It helps to soften the margarine).
- Shape into 1" balls.
- Refrigerate balls.
- Meanwhile, melt chocolate with a bit of crisco (so the chocolate will harden. Without crisco, chocolate will remain soft.) in double boiler.
- Insert toothpick into refrigerated balls and dip into chocolate, leaving small area resembling a buckeye.
- Cool on wax paper and store in refrigerator or freezer.
Tips:
- Use high-quality peanut butter for the best flavor and texture. A natural or unsweetened peanut butter will work well.
- Make sure the peanut butter and butter are at room temperature before you start mixing. This will help them to combine smoothly.
- Don't overmix the batter. Overmixing can make the buckeyes tough.
- Chill the dough for at least 30 minutes before rolling it out. This will help the buckeyes to hold their shape.
- If the dough is too sticky to work with, add a little more powdered sugar.
- If the chocolate coating is too thick, add a little more vegetable oil. You can also use melted chocolate chips instead of candy melts.
- Store the buckeyes in an airtight container in the refrigerator for up to 2 weeks.
