- In a large bowl, gradually stir hot water into peanut butter. Stir in chili paste, soy sauce, oil, vinegar, garlic, ginger and ground red pepper. Place chicken in marinade, and turn to coat evenly. Cover, and refrigerate overnight, turning occasionally.
- Preheat an outdoor grill for medium heat, and lightly oil grate. Thread chicken pieces onto skewers. Discard marinade.

- Mix all ingredients together until well blended.
- The neatest way to do it is to pour the 1/2 cup oil into a large glass measuring cup (2 cup size or larger), add peanut butter to the oil until the total comes out to 1 cup.
- I continue adding vinegar, soy sauce& lemon juice to the measuring cup in this manner.
- I pour it all out into a small mixing bowl to add the seasonings.
- This way the peanut butter pours out w/the oil instead of making a mess in the measuring cup.
- I use jarred garlic& ginger- this accounts for the 5 minutes prep time.
- I mainly use this for tofu chunks or chicken- marinate at least one hour or overnight.
- If using chicken'tenders' set aside some of the marinade (before adding the rest of it to chicken) to use as a dipping sauce.

- Preheat oven to 275 degrees F.
- Add all of the ingredients for the brine except for the ribs in a large sauce pot and bring to a boil just to dissolve the sugar and the salt. Remove the brine from the heat and cool. Place the ribs into a plastic zip top bag and pour the cooled brine over the top. Refrigerate for at least 6 hours and up to 12.
- Remove the ribs from the brine, place on a sheet pan fitted with a rack, and cover with foil. Place in the oven and cook, covered, for 1 hour.
- In a medium bowl, whisk together all of the Peanut BBQ Sauce ingredients and set aside.
- Remove the ribs from the oven and discard the foil. Baste with the sauce, place the ribs back into the oven and baste every half hour until the ribs are tender and easily pull apart, about 2 more hours.
