Provided by Karla Everett

Categories     Cookies

Time 3h10m

Number Of Ingredients 9

1 1/2 c sugar
3/4 c butter
1/4 c water
1 tsp vanilla
1/4 tsp coconut flavoring
2 c flour
1/8 tsp soda
1 tsp salt
1 c crushed peanut brittle

Steps:

  • 1. Cream the sugar and butter ; Add the water , vanilla and coconut flavoring.
  • 2. Sift flour , salt and soda together.
  • 3. Add flour mixture and crushed peanut brittle to the creamed mixture. Stir until just mixed. (DO NOT OVER BEAT.)
  • 4. CHILL for several hours.
  • 5. Make dough into very small balls and place about 2" apart on a lightly greased and floured cookie sheet. (I use the baking spray that has the flour in it ..works great !)
  • 6. Bake @ 350 deg. for about 10 minutes or until lightly brown. Cool on sheet for several minutes ; then remove to a cooling rack.

Tips for Making Peanut Brittle Cookies:

  • For best results, use fresh, high-quality ingredients.
  • To easily measure the honey, spray your measuring cup with cooking spray before pouring.
  • Be careful not to overcook the sugar mixture. It should be a light amber color.
  • If you don't have a candy thermometer, you can test the sugar mixture by dropping a small amount into a bowl of cold water. If it forms a hard, brittle ball, it is ready.
  • Work quickly when adding the peanuts and baking soda to the sugar mixture. The mixture will start to harden quickly.
  • Spread the brittle mixture out thinly on a greased baking sheet. This will help it cool and harden evenly.
  • Once the brittle is cool, break it into pieces and store it in an airtight container.

Conclusion:

Peanut brittle cookies are a delicious and easy-to-make treat that is perfect for any occasion. With just a few simple ingredients, you can create a sweet and crunchy cookie that is sure to be a hit with everyone who tries it. So next time you're looking for a homemade dessert that is both delicious and impressive, give these peanut brittle cookies a try. You won't be disappointed!
