2 large eggs
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 1/2 cups sliced peaches, chopped into 1/4 inch pieces
1/2 teaspoon vanilla
1/2 teaspoon lemon juice

Steps:

  • In a large metal or glass bowl, cream the butter and sugar together. Add the eggs and beat until well mixed.

1/3 c shortening
1/2 c sugar
2 eggs
2 c all-purpose flour
1 Tbsp baking powder
1/2 tsp salt
1 c milk
1 1/2 c fresh peaches, peeled and diced
1/2 tsp lemon juice
1/2 tsp vanilla extract
powdered sugar
fresh peaches, peeled and sliced
whipped cream

Steps:

  • 1. Cream shortening with an electric mixer. Gradually add 1/2 cup sugar, beating well at low speed Add eggs, one at a time, beating well after each addition.
  • 2. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in peaches, lemon juice, and vanilla.
