9 large ripe peaches
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon pure vanilla extract
2 tablespoons flour (for juicy peaches, 1 tbls. for firm peaches)
1/2 cup cold butter (1/2 cup)
1 cup flour
2/3 cup sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°.
  • Grease the bottom of an 8x8 glass pan or casserole dish.
  • Peel and pit the peaches, slice and place in a large bowl.
  • Mix in sugar, flour, cinnamon and vanilla. Toss to coat. Set aside while preparing topping.

5-6 c fresh peaches, peeled & thinly sliced
1/2 c all-purpose flour
2/3 c granulated sugar
1/4 tsp kosher salt
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1 Tbsp fresh lemon juice
STREUSEL TOPPING
2/3 c dark brown sugar
2/3 c all-purpose flour
2/3 c old-fashioned oats
1 tsp ground cinnamon
1/4 tsp kosher salt
2/3 c chopped pecans
6 Tbsp unsalted butter, softened

Steps:

  • 1. Preheat oven to 350ºF. Lightly grease a 7"x11" baking dish. Set aside.
