1/2 cup butter, melted
1 cup brown sugar
2 (9 ounce) cans peaches, drained
1 pillsbury plus spice cake mix
1 cup water
1/3 cup oil
3 eggs
1 quart heavy cream
powdered sugar
vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Grease & flour 2-9" round pans. Mix melted butter and brown sugar and spread on the bottom of the round pans. Place peaches in a spiral design on top of sugar and butter mixture.
  • Blend cake mix w/water, oil and eggs. Beat for 2 minutes and pour into pans.
  • Bake 35-45 minutes until sides of cake come away from pan.
  • While cake is baking make whipped cream and refrigerate until ready to frost cake.
  • Immediately invert on cooling rack. Cool completely and frost bottom layer peach side up with 1/3 of whipped cream, top with 2nd layer and frost top and sides of cake with remaining whipped cream.
  • Enjoy.

29 oz sliced peaches in heavy juice (large can)
1 box Jiffy cake mix
1 c self-rising flour
1 c sugar
1 stick butter
1/2 can(s) evaporated milk
1 Tbsp cinnamon, ground
1 dash(es) clove
1 dash(es) nutmeg
1 dash(es) allspice

Steps:

  • 1. Preheat oven to 325 degrees. (I used my 2 1/2 qt deep dish round casserole dish for this recipe and had to play with the baking time due to the depth of the dish.)
  • 2. Place butter and sugar in a casserole dish.
  • 3. Place in oven while it is preheating.
  • 4. In a separate bowl, mix together all dry ingredients and set aside.
  • 5. Once butter is melted remove casserole dish from oven. Add in 1/2 can of evaporated milk.
  • 6. Whisk in dry ingredients until well blended.
  • 7. Pour can of peaches with juice into batter and mix well.
  • 8. Place mixture in oven and bake until a toothpick comes out clean (about 45 minutes). (I test with a butter knife due to the depth of the casserole bowl I was using.) The cake may be a little undone on the bottom but that may be some of the peach juice.
  • 9. Remove from oven when done and let set for a few minutes.
  • 10. You can leave it in the casserole dish and serve from there or turn out on a plate or serving platter, but be careful since most of the peaches have settled in the bottom of the cake. Serve while still warm with the ice cream of your choice. Enjoy!

  • If you don't have a cast iron skillet, you can use a 9-inch round baking pan.
  • Be careful not to overcook the cake, or it will be dry.
