Put dish under the broiler for just a minute or so to char chicken slightly. Remove and serve with the peach salsa (and coconut rice, if desired).
- PEACH SALSA:.
- Combine all ingredients and refrigerate until serving time.
- The flavor is best if the salsa is refrigerated for 6 hours or overnight.

Tips:
- Use ripe peaches: For the best flavor, use ripe, juicy peaches. If your peaches are not quite ripe, you can place them in a paper bag at room temperature for a few days to ripen.
- Add some heat: If you like a little heat in your salsa, add a chopped jalapeño pepper or two. You can also add a pinch of cayenne pepper or chili powder.
- Use fresh herbs: Fresh herbs, such as cilantro, mint, or basil, add a lot of flavor to this salsa. If you don't have any fresh herbs on hand, you can use dried herbs, but they won't be as flavorful.
- Make it ahead of time: This salsa can be made ahead of time and stored in the refrigerator for up to 5 days. The flavors will meld together and develop over time, making it even more delicious.
Conclusion:
This peach salsa chicken is a delicious and easy-to-make meal that is perfect for a summer cookout or potluck. The sweet and savory flavors of the salsa pair perfectly with the grilled chicken, and the fresh herbs add a refreshing touch. This dish is sure to be a hit with everyone who tries it!
