Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in extracts.   • utter and flour one angle food tube cake pan. Preheat oven to 325 degrees F (175 degrees C). In a mixing bowl, cream together butter and sugar for 5 minutes. Add eggs one at a time. Beat well. GLAZE
1/3 c peaches, pureed
2/3 c sugar
1 Tbsp peach brandy (or juice from peaches)

Steps:

  • 1. DO NOT pre-heat oven. Grease and flour bundt cake pan. NOTE 1: I used a 15 cup bundt pan. NOTE 2: If using canned peached, drain well. Once mashed, drain again. I used a food processor, plusing 4 or 5 times.
  • 2. Combine flour, sugar, melted butter, milk, eggs, vanilla and almond extracts in a mixing bowl. Beat at medium for 20 minutes; fold in mashed peaches. NOTE: Yes you read it right, put in all (except peaches) in a mixing bowl and beat 20 minutes.
  • 3. Pour into prepared pan. Place in cold oven. Bake at 300 degrees for 70 to 75 minutes or until cake test done.
  • 4. Cool on wire rack in pan about 20 minutes. Invert onto plate and glaze.
  • 5. GLAZE Combine peach puree, sugar and peach brandy (or peach juice) in a small saucepan. Cook over medium heat until sugar is dissolved (about 3 to 5 minutes).
  • 6. Remove pan from heat and drizzle syrup on top of warm cake, allowing it to soak into the cake. Repeat process until all syrup has been absorbed into the cake.
  • 7. Serve with a scoop of peach ice cream or some sliced peaches or with both. Enjoy!

I acheived a better flavor when the peaches were a bit under ripe. I also did not peel them. The cake is moist and just powdered sugar, no icing is enough for a special desert. 1 cup butter, softened
3 cups sugar
6 eggs
3 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sour cream
2 cups medium-ripe fresh peaches, peeled and chopped
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • Preheat oven to 350°.
  • Grease and flour a 10-inch tube pan and set aside.
  • In large mixing bowl, beat butter and sugar well, until very light and fluffy.
  • Beating well after each addition, one at a time add eggs.
  • In a separate bowl, combine flour, soda and salt.
  • Mix together sour cream and peaches.
  • Beginning and ending with dry ingredients, alternately add dry ingredients and sour cream-peach mixture to creamed mixture.
  • Beat well after each addition.
  • Stir in extracts.
  • Pour batter into prepared pan and bake until cake tests done, 75 to 80 minutes.
  • Cool slightly, remove from pan and cool completely.

1 cup butter or 1 cup margarine, softened
3 cups sugar
6 eggs
3 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1 cup mashed peach
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • In a large mixing bowl, cream the butter.
  • Gradually add in the sugar, beating at medium speed with an electric mixer.
  • Add in eggs one at a time; beat well after each.
  • In a second bowl, mix together the flour, soda, and salt.
  • In a third bowl, stir together the sour cream and peaches.
  • Add the dry ingredients to the creamed mixture alternately with the peach mixture.
  • Mix until just blended after each addition.
  • Add in flavorings, stir gently to combine.
  • Pour batter into two greased and floured 9x5 inch loaf pans.
  • Bake at 350° for 1 hour and 5 minutes or until pick comes out clean.

1/2 lb butter
1 3/4 cups sugar
6 eggs
1 teaspoon baking powder
3 cups cake flour
1/4 cup milk
1 teaspoon vanilla
3/4 cup peach jam

Steps:

  • Cream shortening, butter and sugar. Add eggs, one at a time, beating well after each addition.
  • Add baking powder to flour and add alternately with milk and vanilla to the mixture. Add peach jam and blend well.
  • Pour into a greased and floured 10 inch tube pan.

1 c butter (soften)
2 1/2 c sugar (use a 1/4 for the pan)
4 medium eggs
1 tsp vanilla extract
1/2 tsp almond extract
3 c all-purpose flour (divided 2 3/4 & 1/4 cup)
1 tsp baking powder
1/2 tsp salt
3 c fresh chopped peaches (peel first)

Steps:

  • 1. Preheat over to 350 degrees. Spray bundt pan with buttery crisco spray (be generous and get all the nooks and grannies). Take the 1/4 cup of sugar and sprinkle all over the pan (tube also).
  • 2. Cream butter and sugar until light. Add eggs one at a time until blended. Put the vanilla and almond extract in and stir. Put the 2 3/4 cups of flour, baking power and the salt into a zip loc bag. Shake well to blend. Add to the creamed mixture slowly and beat until mixed together well. Dredge peaches with ¼ cup flour - fold into batter. Pour into pan and spread evenly around. Shake it a little to settle it. Put in oven to bake.

2 cups gran­u­lated sugar
6 large eggs
1/2 tsp. almond extract
2 tsp. vanilla
3 cups all pur­pose flour

1/2 cup sour cream
3 cups diced fresh or frozen peaches (approx. 6-8 fresh peaches)
3 -4 Tb. butter, softened
1/4 cup granulated sugar

Steps:

  • Pre­heat oven to 350 degrees. In a 9″ - 10″ non­stick bundt pan, butter the pan well with the 3-4 Tbl covering all areas. Dust with the ¼ cup sugar, turning the pan to coat well. In a large bowl, cream the softened butter (not melted) and sugar until light and fluffy. Add the eggs one at a time, beat­ing well after each addition. Beat in the almond and vanilla extracts. In a separate bowl combine the flour, bak­ing soda and salt and mix. Add this dry mixture to batter alternately with sour cream; beating well after each addition. Fold in the peaches, careful not to break them up, but to leave them in chunks. Pour the peach bat­ter into the pre­pared bundt pan.
