Yield Makes about 1 quart

Number Of Ingredients 5

3 cups peeled, pitted, and chopped peaches
2 cups sweetened peach iced tea (bottled or freshly brewed)
1/2 cup sugar (increase to 1 cup if the tea is unsweetened)
1 tablespoon vodka, preferably sweet tea vodka
1 tablespoon light corn syrup

Steps:

  • 1. Purée the peaches in a blender and strain through a fine-mesh sieve into a medium glass or metal bowl, pressing on the solids with a rubber spatula to remove as much liquid as possible. Discard the solids. You should have about 2 cups of purée. Add the tea, sugar, vodka, and corn syrup and stir until the sugar dissolves. Cover and refrigerate until the mixture is very cold (under 40°F), at least 4 hours, then mix well.
  • 2. Churn the sorbet in an ice cream maker according to the manufacturer's instructions. When finished, the sorbet will be thick and soft and can be served as a slushy. To make the sorbet firm enough to scoop, transfer into an airtight container, press plastic wrap directly onto the surface of the sorbet, and freeze until firm.

Tips:

  • Choose ripe, juicy peaches: The quality of your peaches will make a big difference in the flavor of your sorbet. Look for peaches that are fragrant and have a slight give when you press them gently.
  • Peel and pit the peaches: This is the most time-consuming part of the recipe, but it's worth it to get the best flavor and texture. You can use a sharp knife or a peach pitter to remove the pits.
  • Freeze the peaches: Freezing the peaches will help them retain their flavor and make them easier to blend. You can freeze the peaches whole or in slices.
  • Use a high-powered blender: A high-powered blender will help you achieve a smooth and creamy sorbet. If you don't have a high-powered blender, you can use a regular blender, but you may need to blend the sorbet for longer.
  • Add sweetener to taste: The amount of sweetener you add will depend on the sweetness of your peaches. You can use sugar, honey, or maple syrup.
  • Serve immediately or freeze for later: Peach sorbet is best served immediately, but you can also freeze it for later. To freeze the sorbet, transfer it to an airtight container and freeze for up to 2 weeks.
