18 fresh peaches, pitted
1 apple - peeled, cored, and diced
¼ cup orange juice
8 to 10 pint-sized jars
2 cups white sugar
¾ cup honey
2 vanilla beans, split, seeds scraped

Steps:

  • Combine peaches, apple, and orange juice in a large, heavy pot. Bring to a boil; reduce heat to low and let simmer, covered, until peaches are tender, 10 to 15 minutes. Remove from heat. Let cool slightly, about 10 minutes.
  • Meanwhile, inspect 8 to 10 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until peach mixture is ready. Wash new, unused lids and rings in warm soapy water.
  • Puree peach mixture, working in batches, in a blender or food processor until smooth. You should have about 14 cups of puree.
  • Return all of the puree to the pot. Add sugar, honey, and vanilla bean seeds. Bring to a boil, stirring until sugar dissolves; reduce heat to a simmer. Simmer, uncovered, until mixture is thick and starts to mound, stirring frequently, 60 to 70 minutes.
  • Ladle mixture into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

6 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup honey
2 fluid ounces peach schnapps, or more to taste
1 cup white sugar
1 teaspoon ground cinnamon
2 tablespoons all-purpose flour
2 prepared pie crusts

Steps:

  • Place the peaches, honey, and peach schnapps into a saucepan over medium heat, and cook until the peaches are softened and the mixture thickens, stirring occasionally, about 8 minutes. Stir in sugar and cinnamon until combined. Stir in the flour, and bring the mixture back to a simmer. Simmer until the flour has thickened the filling, 10 to 15 minutes. Remove from heat, transfer filling to a container, and refrigerate 4 hours or overnight.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Stretch bottom pie crust into a 9 1/2-inch pie pan; cut the other crust into 1-inch wide strips. Spread the peach filling evenly into the bottom crust, and make a lattice crust from the strips, weaving the strips over and under each other. Pinch strips to the bottom crust at both ends.
  • Bake the pie in the preheated oven for about 15 minutes, then remove and cover the crust edges with foil strips. Return to oven and bake until top crust is golden brown, about 30 more minutes. Cool on wire rack at least 2 hours before serving to allow pie filling to set up.

2 tablespoons cornstarch
1 1/2 tablespoons all-purpose flour
2 teaspoons fresh lemon juice
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup plus 1 tablespoon sugar, divided
1/4 cup mild honey
2 tablespoons water
3 tablespoons unsalted butter
All-butter pastry dough
1 tablespoon whole milk

Steps:

  • Cut an X in bottom of each peach, then blanch peaches in batches in boiling water 15 seconds. Transfer with a slotted spoon to an ice bath to stop cooking. Peel peaches and cut into 1-inch-thick wedges.
  • Toss peaches well with cornstarch, flour, lemon juice, cinnamon, and salt in a large bowl.
  • Put a foil-lined large baking sheet in lower third of oven and preheat oven to 425°F.
  • Bring 1/2 cup sugar, honey, and water to a boil in a 1 1/2-to 2-quart heavy saucepan over medium-high heat, stirring until sugar has dissolved, then wash down any sugar crystals from side of pan with a pastry brush dipped in cold water. Boil without stirring, swirling pan occasionally so caramel colors evenly, until dark amber, about 5 minutes.
  • Remove from heat and add butter, swirling pan until butter is melted. Pour over fruit and toss (caramel may harden slightly but will melt in oven).
  • Roll out 1 piece of dough (keep remaining piece chilled) into a 13-inch round on a lightly floured surface with a lightly floured rolling pin. Fit into a 9-inch pie plate. Trim excess dough, leaving a 1/2-inch overhang. Chill shell while rolling out remaining dough.
  • Roll out remaining piece of dough into an 11-inch round on a lightly floured surface with a lightly floured rolling pin.
  • Transfer filling to pie shell, mounding it. Cover pie with pastry round. Trim with kitchen shears, leaving a 1/2-inch overhang. Press edges together, then crimp decoratively. Brush top all over with some of milk, then sprinkle with remaining tablespoon sugar. Cut 3 steam vents in top crust with a paring knife.
  • Bake pie on hot baking sheet 20 minutes. Reduce oven temperature to 375°F. Continue to bake until crust is golden-brown and filling is bubbling, about 50 minutes more. Cool pie to room temperature, 3 to 4 hours.

1/3 c orange honey
2/3 c brown sugar
1/3 c kosher salt
1/4 c black tea, loose
1/4 tsp cayenne pepper
4 sprig(s) fresh thyme
2 Tbsp fresh ginger, peeled and chopped
16 large shrimp, peeled and deveined
1/4 c olive oil
2 Tbsp lemon pepper seasoning
2 c grilled peach & mango salad, see recipe below
8 sprig(s) fresh mint
4 large lime, cut into quarters
2 c fresh grilled peach & mango salad recipe
1 1/2 c fresh peaches, peeled, pitted and cut into quarters
1 c fresh mango, peeled, pitted and small diced
1/4 c red bell pepper, cut into small dice
1/4 c red onion, cut into small dice
1/4 c fresh mint, thinly sliced
1 1/2 Tbsp fresh cilantro, chopped
1/2 tsp fresh garlic, finely chopped
1/2 tsp serrano chile pepper, seeded and finely chopped
1 tsp orange honey
2 Tbsp olive oil
1 Tbsp balsamic vinegar
1 Tbsp freshly squeezed lime juice

Steps:

  • 1. Place the water into a large pot and bring to a boil, add the honey, brown sugar, salt, tea, spices and seasonings; stirring with a whisk to dissolve the sugar. Let the brine cool to room temperature and then refrigerate overnight.
  • 2. Arrange the shrimp in a single layer in a shallow pan and pour the Sweet Tea Brine over the shrimp; cover the pan with saran. Place the shrimp in the refrigerator and marinate for 2 hours turning frequently in the brine.
  • 3. Remove the shrimp from the brine and blot dry with absorbent paper towels. Pour the olive oil over the shrimp and evenly coat with the oil; generously season the shrimp on all sides with the lemon pepper seasonings.
  • 4. Over medium heat lightly spray the grates of a gas grill with non stick vegetable cooking oil. In batches evenly arrange the shrimp on to the grates and grill over a medium hot fire. Cook the shrimp for approximately 3 minutes turning using BBQ tongs. Grill the second side of the shrimp for an additional 2-3 minutes or until the shrimp are fully cooked.
  • 5. Remove the shrimp from the grill and place in a warm area to rest for 4-5 minutes.
  • 6. To serve: In the center of 4 decorative serving platters arrange 1/2 cup of the Grilled Peach and Mango Salad. Attractively arrange 4 shrimp around the perimeter of each platter. Garnish each platter with 2 sprigs of fresh mint and a wedge of lime. Enjoy; happy summer time grilling!!

  • 8. Toss the peaches gently in a separate mixture of 2 tablespoons of olive oil, 1 tablespoon of molasses, and 1 tablespoon of brown sugar. Lightly spray the grates of a gas grill with non stick vegetable cooking oil. Place the peach quarters onto the grates and grill over medium high heat for 1-2 minutes on each side or until the peaches are nicely caramelized, frequently brushing the peaches with the molasses mixture while they are grilling.
  • 9. Remove the peaches from the grill to cool. Cut the peaches into medium size dices. Place all the salad ingredients into a mixing bowl and combine. Gently stir with a spoon before serving.

Filling
1/4 cup sugar
3 tablespoons all purpose flour
2 teaspoons grated lemon peel
6 ripe medium peaches, peeled, halved, pitted, cut into 1/2-inch-thick slices (about 4 cups)
2 tablespoons honey
2 tablespoons chilled unsalted butter, cut into small pieces
2 tablespoons sliced almonds
2 tablespoons peach preserves, melted
Mascarpone Cream
1 cup chilled whipping cream
6 tablespoons mascarpone cheese*
2 tablespoons sugar
1/4 teaspoon vanilla extract

Steps:

  • For crust:
  • Blend flour, sugar, and salt in processor. Using on/off turns, cut in butter until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour.
  • Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1 inch. Fold overhang in and press to form double-thick sides. Press inside edge of crust to push it 1/8 to 1/4 inch above top edge of pan. Pierce bottom of crust with fork. Refrigerate 1 hour.
  • Preheat oven to 400°F. Bake tart crust until golden, piercing with fork if bubbles form, about 25 minutes. (Can be made 1 day ahead. Cool; wrap in plastic and store at room temperature.)
  • For filling:
  • Mix sugar, flour, and lemon peel in large bowl to blend. Add peaches and toss to coat. Pour into baked crust. Drizzle honey over peach mixture; dot with butter and sprinkle with almonds. Bake until peaches are tender and almonds are toasted, about 35 minutes. Brush fruit and almonds with peach preserves. Cool 15 minutes before serving. (Can be made 6 hours ahead.   • Preheat oven to 350°F. Line rimmed baking sheet with parchment paper. Toss peaches, sugar, and honey in large bowl. Place peaches, cut side down, on prepared baking sheet. Roast peaches 15 minutes; turn over and bake until tender and juices begin to caramelize, about 10 minutes longer. Scrape peaches and pan juices into food processor and cool; blend until smooth. Steps:

  • In a blender, combine the peaches, honey and orange juice. Blend until smooth. Pour it into a pitcher, then stir in the chardonnay and ginger liqueur.

  • Preheat oven to 350 degrees F.

1/2 lemon with rind, cut into chunks
1/2 orange with rind, cut into chunks
14 c chopped fresh peaches with skins, pitted (approximatley 14-18 peaches
2 c honey
2&1/2 c sugar
1 cinnamon stick
13 half-pint canning jars

Steps:

  • 1. Place lemon and orange chunks in a food processor, cover and process until finley chopped. Pour into large dutch oven.
  • 2. Put peach chunks into food proccesor, and blend until smooth. Add peaches to lemon/orange mixture.
  • 3. Add honey, sugar, and cinnamon stick. Bring to boil, reduce heat and cook uncovered over low heat for 30-35 minutes, stirring often. Remove cinnamon stick.
  • 4. Ladle hot peach mixture into hot, sterilized jars, leaving 1/4 inch head space. Wipe jar rims with a clean towel and put on lids. Tighten ring on lid.
  • 5. Proccess jars in boiling water canner for 5 minutes. Remove jars and cool on wire rack.

I've just recently discovered that omelettes don't need to be savoury, they can also be sweet. This is a simple sweet omelette recipe from Alberta Egg Producers.

125 ml sliced peaches (fresh or canned)
5 ml liquid honey
1 drop vanilla extract
2 eggs
5 ml butter
15 ml sliced almonds, toasted
icing sugar

Steps:

  • Combine peaches, honey and vanilla in a small bowl and set aside.
  • Whisk eggs in a small bowl.
  • Melt butter in a 15 cm (6-inch) non-stick skillet over medium-high heat and swirl to coat pan. Pour in eggs. As mixture begins to set, lift edges with spatula to allow the uncooked egg to flow underneath.
  • Cook until bottom is set and top is almost set.
  • Spread peaches and almonds over half of the omelette. Fold the other half over the peaches, using the spatula, and tilt the skillet so that the omelette slides out of the pan.
  • Sprinkle with icing sugar. Serve immediately.

1/2 medium peach, peeled
2 tablespoons Dijon mustard
1 tablespoon honey
1 tablespoon brown sugar
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
1 pork tenderloin (3/4 pound)

Steps:

  • Place the peach, mustard and honey in a blender; cover and process until blended. Set aside., In a large resealable plastic bag, combine the brown sugar, salt, pepper and cayenne. Add the pork and shake to coat., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat using a drip pan. Place pork over drip pan and grill, covered, over indirect medium-hot heat for 20-25 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing. Serve with peach sauce.

Sweetened with wild honey and made with local tree-ripened peaches, this is will be our favorite peach pie from now on. The prep time shown below is dependent upon whether or not you use ready-made crusts, and whether you peel peaches with a boiling water/ice water bath or just peel them raw.

2 pie crusts (May use gluten-free. May use ready-made or make your own.)
6 medium peaches, peeled and sliced
1/4 cup cornstarch
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1 cup honey
2 tablespoons lemon juice

Steps:

  • Prepare crusts, place bottom crust in an oiled pie plate, cut vents in top crust and set aside.
  • Using a large skillet, toss peaches, cornstarch, cinnamon and baking soda. When cornstarch is dissolved, add honey and stir to mix.
  • Bring to a boil, reduce heat, and simmer for 4-5 minutes or until thickened.
  • Remove from heat and add lemon juice.
  • Pour into bottom crust. Add vented top crust. Crimp and seal crusts. Place on a baking sheet. Cover lightly with foil.
  • Bake for 20 minutes, remove foil, and continue baking for 20-25 minutes longer until crust is slightly browned.

My neighbor used to have a restaurant in Indonesia. He was kind enough to share one of his most popular item on the menu with me. My kids who are big fans of peaches, canned or fresh, and drumsticks love this recipe, especially on a hot,summer day. These are good when served hot over rice, or bring to the park for a picnic.

2 teaspoons butter
1 teaspoon minced garlic
10 chicken drumsticks
½ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon butter
½ onion, sliced
5 teaspoons honey
2 teaspoons soy sauce
½ teaspoon ground ginger
1 cup water
1 lemon, thinly sliced
1 teaspoon cornstarch
2 teaspoons water
1 peach, peeled and sliced

Steps:

  • Heat 2 teaspoons of butter in a large skillet over medium-low heat. Stir in the garlic, and cook for a minute or two until the garlic softens and mellows. Season the chicken with salt and pepper, and add to the skillet. Cook until the chicken has browned on all sides, about 15 minutes.
  • When the drumsticks have browned, remove, and set aside. Melt the remaining 1 teaspoon butter in the skillet, and stir in the sliced onion. Cook and stir until the onion begins to soften, about 5 minutes, then stir in the honey, soy sauce, ginger, and 1 cup of water. Return the drumsticks to the skillet, and bring to a boil over high heat. Reduce heat to medium-low, spread the lemon slices overtop, cover with a lid, and simmer until the drumsticks are tender and no longer pink at the bone, about 15 minutes.
  • Once the drumsticks have cooked, remove them to a serving platter and keep warm. Dissolve the cornstarch in 2 teaspoons of water, and stir into the simmering sauce. Add the peach, and cook until the sauce thickens and returns to a simmer. Pour sauce over the drumsticks to serve.
