2 6-ounce salmon fillets, skin removed
coarse salt and pepper to taste
¼ cup peach jam, homemade preferred
2 tbsp honey
1 tbsp bourbon
¼ tsp garlic powder
1/8 tsp chipotle powder

Steps:

  • Preheat the broiler to high. Season the salmon with salt and pepper on both sides. Add salmon to a pan sheet pan.
  • Whisk the peach jam, honey, bourbon, garlic and chipotle powders until smooth. Brush the glaze upon the fish covering the top and sides.
  • Broil the salmon at least 6 inches from the heat element to an internal temperature of 145°F - about 10 minutes depending on the thickness of your fillets. Keep an eye out to make sure the salmon glaze doesn't burn.

1/4 c dijon mustard
1/4 c brown sugar, firmly packed
2 Tbsp soy sauce
2 Tbsp bourbon
1 Tbsp worcestershire sauce
4 6 oz salmon
1/4 c peach preserves
2 Tbsp white wine vinegar
2 tsp worcestershire sauce
2 tsp dijon mustard
2 tsp honey

Steps:

  • 1. Combine first 5 ingredients, mix well and add salmon fillets, turn to coat well, cover and refrigerate 3-4 hours
  • 2. Combine next 5 ingredients for basting sauce in small sauce pan, heat to simmer to wake up flavors, refrigerate until needed.
  • 3. Set grill to medium heat. Cook marinated salmon on grill, basting with sauce, cook until salmon is done.

¼ cup all fruit, no sugar added peach preserves
1 clove garlic, minced
¼ teaspoon ground ginger
½ teaspoon Asian chili garlic sauce, or to taste
2 teaspoons lemon juice
aluminum foil
cooking spray
2 (6 ounce) fillets salmon (1-inch thick)
salt and freshly ground black pepper to taste
½ teaspoon sesame seeds
1 medium green onion, thinly sliced
lemon juice (optional)

Steps:

  • Stir peach preserves, minced garlic, powdered ginger, chili garlic sauce, and lemon juice together in a microwave-safe bowl until blended. Microwave on high for 30 to 35 seconds, or until boiling. Carefully remove from the microwave and stir again; set aside.
  • Create a foil sling for the air fryer by cutting a piece of foil wide enough to cover the bottom of the air fryer basket and go up two sides about 2" inches. Farmed salmon is "medium" at 125 degrees F (51 degrees C), and wild salmon is "medium" at 120 degrees F (48 degrees C). If needed, add air frying time in 3-minute increments, until salmon reaches preferred doneness.
  • Lift the salmon filets from the air fryer using the sides of the foil sling.
  • To serve, pour prepared glaze over fillets and use the remainder of the glaze as a sauce. Sprinkle fillets with sesame seeds and green onions and drizzle with lemon juice.
