PEACH JAM

Peach Jam image

This easy homemade Peach Jam has just five-ingredients and I've included step-by-step instructions for how to make it!

Provided by Lauren Allen

Categories     Side Dish     Snack

Time 35m

Number Of Ingredients 5

3 cups fresh peaches ((about 2 lbs. fully ripe peaches))
4 1/2 cups granulated sugar
2 Tablespoons fresh lemon juice
3/4 cup water
1 box Sure Jell Fruit Pectin

Steps:

  • Have ready clean plastic or glass containers and lids.
  • Peel and pit peaches. Finely chop or pulse fruit in a food processor until diced. Measure exactly 3 cups of diced peaches into a large bowl (You can eat any extra diced peaches leftover after measuring 3 cups.)
  • Add one cup of sugar to the bowl and stir well. Rest for 5 minutes. Repeat with remaining sugar, adding it a little at a time and resting in between. Stir in lemon juice. Let mixture rest for 10 min.
  • Taste the mixture and if it's still grainy from the sugar don't proceed until the sugar has dissolved! (If needed, you could place the heat-proof bowl or peaches over a saucepan of warm water on the stove. Gently stir the mixture and the heat will help the sugar to dissolve.)
  • Meanwhile, add the water and pectin to a small saucepan and stir to combine. Bring mixture to a boil, stirring constantly. Boil and stir for 1 minute, then remove from heat and add to the peach mixture. Stir jam for 3 minutes.
  • You should notice the jam has thickened a little. A will continue to thicken a bit more as it rests. (See notes, if it is still very runny).
  • Fill your glass or plastic containers, leaving 1/2 inch headspace. Wipe rim of jars clean and cover with lids. Let stand at room temperature 24 hours. (This allows the jam time to set up, but feel free to enjoy one of the jars right away!)
  • Store jam in the refrigerator for up to 3 weeks or freeze for up to 1 year.

PEACH FREEZER JAM - EATING WELL MAGAZINE

Peach Freezer Jam - Eating Well Magazine image

I got this recipe out of the August '08 Eating Well Magazine. I made it using about 3/4 C of sugar and apple juice. It worked great. I'm putting the recipe here so I don't lose it, because my family loved it. I like the fact that it is lower in sugar than other freezer jam recipes. The magazine says not to use regular pectin in place of the no sugar needed pectin. I used Ball brand natural no sugar needed pectin. The prep time listed does not include the setting up stage after placing in jars.

Provided by Kiersten Phae

Categories     Fruit

Time 25m

Yield 6 8 ounce jars

Number Of Ingredients 6

3 cups peaches, mashed. About 6 peaches
1 3/4 cups unsweetened white grape juice or 1 3/4 cups apple juice
1/2 teaspoon fresh lemon zest
1 tablespoon lemon juice
1 3/4 ounces of no sugar needed pectin
1 -3 cup sugar

Steps:

  • Place white grape (or apple) juice, lemon zest and lemon juice in a large saucepan.
  • Gradually stir in pectin; continue stirring until completely dissolved.
  • Place over medium-high heat and bring to a full rolling boil (a boil that cannot be "stirred down"), stirring frequently.
  • Boil hard for 1 minute. Remove from the heat.
  • Immediately stir in the mashed peaches. Stir vigorously for 1 minute.
  • Stir in sugar to taste until dissolved.
  • Divide the jam among six 8-ounce canning jars, leaving at least 1/2 inch of space between the top of the jam and the top of the jar (this space allows the jam to expand as it freezes).
  • Cover with lids and let the jam stand at room temperature until set, about 24 hours.
  • Store in refrigerator or freezer until ready to use.
  • This keeps 3 weeks in the refrigerator or 1 year in the freezer.

Tips:

  • Choose ripe, flavorful peaches for the best results.
  • If you don't have a food processor, you can mash the peaches by hand with a potato masher or fork.
  • Be sure to measure your ingredients accurately. Too much or too little of any ingredient can affect the final outcome of the jam.
  • If you want a smoother jam, you can strain it through a fine-mesh sieve after cooking.
  • Canning jars and lids should be sterilized before filling. You can do this by boiling them in water for 10 minutes.
  • Process the jars in a boiling water bath for the recommended amount of time. This will help to seal the jars and prevent spoilage.
  • Store the jam in a cool, dark place for up to 1 year.

Conclusion:

Peach freezer jam is a delicious and easy way to preserve the taste of summer peaches. With just a few simple ingredients and a little bit of time, you can enjoy this delicious jam all year long. Be sure to experiment with different variations of the recipe to find your favorite way to make it.
