1/4 cup butter, softened
1/2 cup sugar
1 cup all-purpose flour
1/4 cup chopped walnuts
FILLING:
1 package (8 ounces) reduced-fat cream cheese
3/4 cup confectioners' sugar
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
7 medium peaches, thinly sliced
GLAZE:
3 tablespoons cornstarch
2 cups water
1 package (.3 ounce) sugar-free lemon gelatin

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Gradually add flour (mixture will be crumbly). Stir in walnuts. Press into a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 14-16 minutes or until lightly browned. Cool on a wire rack. , For filling, in a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in half of the whipped topping. Carefully spread over crust. Top with peaches. , For glaze, in a small saucepan, combine cornstarch and water until smooth. 1 package (.3 ounce) sugar-free raspberry gelatin
1 cup boiling water
1 cup cold water
1 can (15 ounces) sliced peaches in juice, well drained and halved
3 cups cold fat-free milk
1 package (1.5 ounces) sugar-free instant vanilla pudding mix
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed

Steps:

  • Arrange cake cubes in a 13-in. x 9-in. dish. , In a small bowl, dissolve gelatin in boiling water; stir in cold water. Pour over cake. 1 (15 oz.) crushed pineapple in its own juice
1 large box apricot jello - or can use peach
1 - 8 oz cream cheese, softened
1/2 c sugar
1 large jar - apricot baby food or can use peach
1 - 8 oz cool whip
1/2 c chopped, walnuts

Steps:

  • 1. In a medium sauce pan, bring the pineapple and juice to a boil - stir in jello until dissolved and simmer for 5 minutes. Set aside to cool.
  • 2. In large bowl, beat the cream cheese and sugar together until well blended. Add the pineapple mixture and baby food, then mix until well blended.
  • 3. Fold in cool whip & nuts.
  • 4. Spread into a 9 x 13 baking dish and refrigerate until set.
  • 5. Serve salad as is or with whipped cream. I sometimes sprinkle nuts on top, before refrigerating. Enjoy! I find this salad refreshing.

This is another of those recipes my mom and I found when cleaning out one of her kitchen closets. It was cut from a Betty Crocker cake mix box. If you like peaches you'll love this cake!

1 (16 ounce) can sliced peaches (in light syrup)
1 (18 1/4 ounce) package yellow cake mix
1/3 cup oil
3 eggs
1 (6 ounce) container peach yogurt
1 (4 ounce) container frozen whipped topping

Steps:

  • Preheat oven to 350 degrees. Grease and flour 2 8-inch or 9-inch round cake pans.
  • Drain the peaches, reserving the syrup. Add enough water to the syrup to make 1 1/4 cups. In a large bowl, beat cake mix, syrup, oil and eggs until well combined.
  • Pour batter into prepared pans. Bake at 350 degrees, 27 to 32 minutes for 8-inch pans or 23 to 28 minutes for 9-inch pans. Cool 10 minutes in pan, then remove to wire rack and cool completely.
  • Cut peaches into bite-sized pieces. Mix yogurt and whipped topping, then fold in peaches. Place 1 layer of cake on serving plate; top with 1/2 of the whipped topping mix. Cover with the second cake layer and frost top with remaining whipped topping mix. Refrigerate about 2 hours before serving.

1 cup butter
2 cups powdered sugar
4 eggs
7 -8 ripe peaches, skinned and sliced
1 pint whipping cream
2 tablespoons powdered sugar
1 drop vanilla

Steps:

  • Grind box of cookies to course crumbs. Place 3/4 crumbs in a 13" X 9" pan. Reserve remaining crumbs.
  • Beat butter, powdered sugar and eggs for 15 minutes. Pour on top of the crumb layer.
  • Next layer peach slices evenly to cover.
  • Whip whipping cream to soft peaks and add 2T powdered sugar. Beat to medium peaks. Layer whipped cream evenly over the peaches.
  • Sprinkle remaining cookies on top.
